This is not a Chocolate Pie and it is not a Brownie Pie. It is a Fudge Pie with Pecans. This pie really taste like a piece of fudge that has not had time to cool to its solid form. One bite creates a warm, creamy, dreamy chocolate sensation in your mouth. I know that sometimes I over use the word “love”, but I really love this pie. It ranks up there with one of the best pies I have ever eaten. The last time I fixed this pie my special needs son Caleb, read more about Caleb in the About Roarks section, who has selective mutism and rarely speaks said, “That was YUMMY!” We were all so surprised! Seriously, he rarely says a word due to his selective mutism. I knew then that I needed to blog about this pie.
What makes a good Coleslaw?
What makes a good Coleslaw is a little bit of vinegar and a little bit of sugar. I have found that a little sweet relish which already includes a little vinegar and a little sugar makes a delicious Cole Slaw. This coleslaw has a creamy, slightly-sweet, and tangy flavor. It really has a great balance between sweet, sour and tanginess. A lot of times recipes have too much mayonnaise or sugar. This recipe has a nice balance. It makes a delicious topping or side dish to many dishes like BBQ, BBQ sandwiches, fried chicken, fish tacos, chili dogs, Reubens, or most any other home cooked favorites. If you are looking for a quick side dish to compliment your favorite dishes, try this easy coleslaw.
Having a nice balance in life is very challenging for moms to do. We are called to wear many hats in life. We get pulled from one thing to the next especially if we have several children. Our challenge is to try to always put God first. Spend a few minutes with God each day reading a chapter or just a verse from God’s Word and dwell or meditate on it. Spend time with Him in prayer each day. He will balance the rest of our day. Somehow, it always works.

Tomato Bacon Pie – VIDEO – Watch Me Fix It!
Do you enjoy a Bacon, lettuce, and Tomato sandwich? Maybe with a little mayonnaise and some basil. Well, this pie is for you! It taste even better than a BLT. My oldest daughter would not eat tomatoes until she had a piece of tomato pie. It is a creamy, cheesy mouth-watering delight. How To Cut A Watermelon or Cantaloupe With NO Mess
I have so many great memories of eating delicious, ice-cold, juicy watermelons. Growing up in LA (lower Alabama), it was always HOT and humid and an ice-cold watermelon always hit the spot. I did not care about getting messy as a kid. We would line the picnic table out back with newspapers. My father would take the huge watermelons that had been iced down in a cooler and put them on the picnic table under the large shade tree in the backyard. He would slice everyone a piece and we would dive head first into the watermelon. After we ate a bite of melon, we would be left with a large mouthful of watermelon seeds. Of course, we had a great time spitting the seeds all over the yard. After we finished eating our watermelon, we would toss the news paper in the trash. Dad would take the water hose and rinse the picnic table down.
Enjoy God’s Candy, fresh fruit, all the time without the mess. If you do not already use a clean trash bag to cut your melon, try it.

Christian Fiction Book Review-Short-Straw Bride by Karen Witemeyer
Having discovered author Karen Witemeyer last summer, I quickly finished all three of her books and could not wait for more. Well, as of last week, the waiting was over with the release of her fourth novel, Short-Straw Bride. The description on the back cover, “Four Brothers. Four Straws. One Bride.”, grabbed my attention immediately and I couldn’t wait to see how this story panned out.
Travis Archer has guarded his brothers and his land diligently ever since the promise he made to his father. No one besides an Archer had ever stepped foot on his land, until Meredith Hayes. When circumstances force her to marry an Archer, Meredith’s fate is determined by a short-straw. Although at first it might have been seen as a marriage of convenience, Travis and Meredith’s relationship soon grows. The love Travis has for Meredith reminds me of the love Christ has for us. Even though Christ’s role was to serve as the sacrifice for our sins, it wasn’t duty that kept Him on the cross, it was love. He loves us so much that He was willing to suffer the most agonizing of deaths, so that we might be redeemed. “And I pray that you, being rooted and established in love, may have power, together with all the Lord’s holy people, to grasp how wide and long and high and deep is the love of Christ,and to know this love that surpasses knowledge—that you may be filled to the measure of all the fullness of God.”-Ephesians 3:17-19

It is never easy to make things homemade but when you have time it is so worth it. My challenge is for you to make this homemade pie crust. Your family will definitely notice the difference. They will know that you took the time to create something extra special for them. You will be recreating precious memories of time spent with their mother or grandmother eating homemade pie. Sharing My Heart With My Readers – Struggles With Our Adopted Children

“For I know the plans I have for you,” declares the Lord, “plans to prosper you and not to harm you, plans to give you hope and a future.” Jeremiah 29:11
I do not have the perfect family situation like you may think I have. My family has struggles like most families have. Every day is a struggle to teach my children that they are loved and God loves them. This has been extremely difficult to teach two children that had never bonded with anyone, never experienced someone who cared for them, or experienced someone who loved them. When I write about trusting God and having Faith in God, I am living a life where I have to Trust and have Faith in God. Over the past several years, I have needed God’s help more than ever. I believe that all things work for the Glory of God. God has all of us in His hands. His promises are true. He will take care of His children. This does not mean that life will not be difficult. During these extremely challenging times in my life, I could deny God or I could draw closer to Him and believe in His promises to take care of me and my family. God really does have plans to prosper us and not to harm those who love Him.
After experiencing difficult times in my life, I know that God’s blessings do come. In other words, there is a light at the end of the dark tunnels in our lives. This has been true with almost every hardship that I have experienced. Since our family is in the middle of a very difficult situation, we keep believing that one day we will see the good that will come out of everything.
I have mentioned often that my husband and I have five children. Three of our children are biological and two were adopted. Three of our children have special needs. Caleb is 15 years old. He has had 17 brain surgeries. He has cerebral palsy, seizures, and selective mutism. He is extremely loving. He reminds us often with his actions what is important in life.
