Carly is my oldest daughter who is a junior in college. She is planning on taking her MCAT this summer. She is hoping to go to medical school after college. Some of you know her from reading her Christian Fiction Book Reviews on my blog. She loves the Lord and enjoys reading Christian Fiction and does a great job reviewing them.
Today, I wanted to post this Ham and Spinach Grilled Cheese because this is Carly’s favorite sandwich. She came up with this and calls it her Grown Up Grilled Cheese. We eat a lot of these sandwiches for lunch when she is home. Most of the time, we fix them in the oven but we also fix them on the Panini grill. Either way, they are really good! Just use your favorite deli meat, your favorite cheese, and some spinach to make this quick and easy grown up grilled cheese as Carly would say.
Start by using about a teaspoon of mayo and spread it on one side of a slice of your favorite sandwich bread. Place the mayo side of the bread down on a sheet pan. The mayo helps give the sandwich a nice golden color. It makes it crunchy on the outside but ooey-gooey on the inside. Top the bread with your favorite cheese.
Add about 1/4 to 1/2 cup of fresh spinach on top of the cheese. Next, add your favorite seasoning. Carly likes a little Cajun or Pizza seasoning.
Place your favorite deli lunch meat on the spinach.
Next, add another layer of cheese. You really need another piece of cheese to help the bread, meat, and spinach stick together.
Spread mayo on another piece of bread and place it on top of the sandwich. The mayonnaise side of both pieces of bread should face the outside of the sandwich. Again, the mayo helps give the sandwich a nice golden color.
Bake it in the oven at 350 degrees for 15 minutes or until it is golden brown. You can also place it into a panini grill like the picture above.
