This is a delicious version of a New Orleans Roast Beef Po-Boy.

I remember the first time I heard the word Debris (pronounced Day-bree) when someone was talking about a roast. I had no idea what they were talking about.  This is another word that is used in the New Orleans area.  It is obvious to the locals that you are not from the New Orleans area when you ask about it. Basically, the roast is cooked low and slow until it completely falls apart.  This us done in the oven.  The bits and pieces from the roast are called Debris.  I have found that the best way prepare this roast beef debris is in the crock-pot.  Again, I love my crock-pot as much as I love my cast-iron dutch-oven and skillet. You may already cook your roast in a crock-pot. My main purpose with this post is not only to give you a great crock-pot roast recipe, but to also give you lots of different ideas to serve the Crock-Pot Roast Beef Debris.  While living in the New Orleans area, I tried many of these roast beef debris items at several different restaurants.  They all inspired me to make them myself.

New Orleans Roast Beef Debris Po Boy - Slice the French bread length wise. Generously, add mayo on the top and bottom part of the bread. My husband likes to add a little horseradish on one side. Cover the bottom of the sandwich with a generous portion of the roast beef.  Next, cover the roast beef with brown gravy made from the beef broth after the roast has cooked, See Below. Try adding your favorite cheese to this sandwich (we used Swiss) and 1/2 cup of shredded lettuce.

Take the roast beef out of the crock-pot and chop it up into small pieces. If you let it cook, you can do this with your fingers the meat is so tender.

 

Roast Beef Debris with Gravy over a Baked Potato – Cut the baked potato length wise down the middle and open up the potato.  Fill the potato with a generous amount of roast.  Next, drown the roast and potato with brown gravy made with the left over beef broth after the roast has cooked.

Baked Potato with Roast Beef Debris and Gravy

If you have never tried Roast Beef and Gravy over French Fries, you are really missing a treat.  I season my fries with Cajun seasoning before baking them.  Once they are baked, just add the roast beef and gravy.  Delicious!

Other ideas to serve this debris:  Serve it over biscuits, mashed potatoes, or rice . In the New Orleans area, I have had this roast beef debris on top of a hamburger.  It was very messy but extremely delicious.

Add the beef broth.

Crock-Pot Roast Recipe –

  • 1 – 4 pound Round or Chuck Roast
  • 1 tsp Cajun Seasoning
  • 2 onions, thinly sliced
  • 2 bay leaves
  • 6 cups beef broth
  • 1 TB Worcestershire Sauce
  • 3 celery ribs, chopped
  • 1/2 teaspoon each of rosemary, thyme, marjoram, and oregano crushed
  • 1/4 cup flour to cover the roast
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 granulated garlic

Season roast with salt, pepper, and garlic and then sprinkle flour over roast.  Brown roast on all sides in a hot skillet using the vegetable oil.  Place in crock pot with all the remaining ingredients on top of it.  Add enough beef broth or water to cover the top of the roast.  This will depend on the thickness of your roast. Cook on low for 10 hours.

If I am serving the roast on the plate with sides, I cook the roast in the crock-pot on Saturday night.  On Sunday morning, I add 2 cups of carrots and cook on low another 4 hours. You could also add potatoes at this time.  Normally, I use the broth to make a delicious brown gravy and make mashed potatoes or garlic mashed potatoes.

Remove the roast from the crock-pot. The roast should fall apart easily. Let the roast cool and pull the roast apart with your fingers or chop the roast into pieces.

Use the beef broth from the roast and make a brown gravy.

Brown Gravy

Melt 1/2 cup butter in a large skillet.  Slowly whisk in 1/2 cup of flour.  Next, slowly whisk in 4 cups of beef broth left over from cooking the roast.  In the New Orleans area, they add some bits and pieces from the roast (debris) into the gravy.
