Creamy and delicious crock-pot lima beans.

A lot of women buy shoes or clothes, not me, I buy Crock-pots and cookbooks.  On any day, I would choose a new cookbook over a new pair of shoes or piece of clothing.  There is nothing like seeing the smiles on friends and family when they are truly enjoying something you have prepared to eat.  This is why I get so excited to try new recipes and what makes it even better is trying them in my crock-pot.  If you have eaten at my house, you probably ate at least one dish from a crock-pot.  I have several crock-pots and many days they are all full.  Most everything I make in my crock-pot, I enjoy better than preparing it using other methods of cooking including this Creamy Lima Bean Casserole.

Lima Bean Casserole is great side dish that would go well on any Holiday table.  I grew up eating Lima Bean casserole but recently tried cooking it in my crock-pot.  I would love to hear from you, especially if you did not grow up in the south and have never had a Lima Bean casserole.  If you did not, you are missing a creamy, cheesy, delicious way to eat Lima Beans.  I hope you will give these Lima Beans a try.

CROCK-POT LIMA BEAN CASSEROLE

What else is on our Thanksgiving and Christmas table? I am pretty sure you will find most of the following sides dishes on any Southern Thanksgiving or Christmas table.  My family loves all of them.  I guess it is tradition that I have to fix these dishes or at least most of these dishes.  I do make my family narrow the list down.  Usually, everyone gets to pick their favorite dish and they help prepare that dish.

Lima Bean Casserole Recipe – I adapted this recipe from Miss Daisy Celebrates Tennessee cookbook.  I added a cup of cheddar cheese to make it even creamier.

  • 1-10 ounce can Cheddar Cheese Soup
  • 1/2 cup milk
  • 1/2 cup mayonnaise
  • 1-10 ounce packages frozen Lima Beans, completely thawed
  • 3/4 cup chopped celery
  • 1 TB Worchestershire Sauce
  • 1 cup shredded cheddar cheese
  • 6 ounce container of French’s Fried Onions (1 cup to mix inside the recipe and the rest to top the lima bean casserole)

Mix together all these ingredients in a large bowl except for 1 cup French Fried Onions.  Spray a crock-pot (I used a 5 quart crock-pot) with a cooking spray.  Pour the ingredients into the crock-pot and top with the remaining French Fried Onions.

Cook on low for 3 hours.  The Lima beans will be bubbling around the edges when they are done. Turn the crock-pot to warm until you are ready to serve them.
