Use any color food coloring to add color to these cookies. Try red and green for Christmas and Orange for fall.

Devil's Food Stuffed Cookies

These cake mix sandwich cookies are so easy to make.

If you are looking for a quick, easy, and very delicious cookie recipe, this one is for you.  You can whip these cookies up at the last-minute and still impress everyone. They are similar to a whoopie cookie. You can color the icing to match a theme or party.  I normally color the icing orange for the fall.  These cookies have become a family favorite.  I hope you really enjoy them. 
I follow the basic recipe for Duncan Hines Cake Mix cookies.
  • 2 boxes Duncan Hines Devil’s Food Cake Mix
  • 1 cup vegetable oil
  • 4 eggs, beaten

Mix together all the ingredients and bake at 350 degrees for 10 to 12 minutes.  I use a very small ice cream scoop (1 TB size) and scoop the cookie dough onto parchment paper.


  • 2 cups confectioners’ sugar
  • 2 cups marshmallow creme
  • 1/2 cup butter, softened
  • 2 teaspoons pure vanilla extract

1. Use an electric mixer and beat filling ingredients until fluffy.  Spread the filling on the bottoms of half of the cookies.  Top each with another cookie.

I used a 1 tablespoon ice cream scoop.  Bake 350 degrees for about 10 minutes.  Cookies will be soft to the touch.
