Cheesy Chicken Quesadillas

My family loves these easy Cheesy Chicken Quesadillas.  What makes them so easy is preparing the chicken ahead of time in the crock-pot. See earlier post for Crock-Pot Tex-Mex Shredded Chicken.   Having the chicken already prepared makes these quesadillas quick and easy. This allows us to enjoy these quesadillas often.  My children have fun building their quesadilla the way they like it.   We often build our quesadillas with the Tex-Mex chicken, a salsa/sour cream sauce, spinach, additional Mexican seasoning, and lots of cheese.   My husband and I like Pepper Jack Cheese, but my children like Colby Jack in their quesadillas.  If you buy your cheese already shredded, a Mexican blend would be great.  To cook the quesadillas, I toss them on my indoor grill or place them in a frying pan.  You will know they are ready to eat when the cheese starts oozing out everywhere.  YUM!   Melted Cheese and Chicken, what could be easier or better? These quesadillas are wonderful dunked into some Taco or Chicken Tortilla Soup or just eat them all by themselves.  The quesadillas normally get topped off with more sour cream and salsa if eaten alone.

To make the sauce for the bottom of these quesadillas, I mix equal parts of sour cream and salsa.  If I am using the sauce to dip the quesadillas into, I add about 1/2 teaspoon of Mexican seasoning like this Fajita seasoning in the picture.

Layer a small amount of sauce on the bottom of a tortilla.   Add some Tex-Mex shredded chicken, and some spinach.

Layer a small amount of sauce on the bottom of a tortilla.  If you add to much sauce, it will be difficult to pick the quesadilla up.   You can use additional sauce for dipping.  Next, add some Tex-Mex shredded chicken, spinach and Mexican seasoning to taste.

Top the sauce, chicken, and spinach off with lots of shredded cheese.  Grill until golden on the outside and you can see all the melted cheese on the inside of the tortilla.
