Gooseberry Patch Cookbooks are definitely some of my favorite cookbooks. They are collections of recipes from people all over the country who enjoy cooking. The recipes are down home and easy to prepare. I have already tried the Texas Cowboy Beans, Cajun Boiled Peanuts, Lemonade Pie, and the Old Fashioned Lemonade. I look forward to blogging about some of these recipes soon. I also cannot wait to try some of the sandwich recipes in this cookbook. They are all easy and sound so delicious which make them perfect for when you have no time to prepare a meal. While reading through the Gooseberry Patch Game-Day Cookbook, these World’s Best Cookies definitely caught my eye. Who does not love cookies? I just had to try this recipe especially since it claimed these are the World’s Best! I had never tried a cookie with the combination of oats, crispy rice cereal, and shredded coconut together. I had also never made a cookie using oil instead of all butter. These cookies turned out super moist and light. They taste similar to an oatmeal cookie but with extra crunch from the crispy rice cereal, nuts, and the coconut. We really enjoyed these tasty soft and crunchy cookies. They were definitely a unique twist from the cookies we normally make and a great yummy treat!

World’s Best Cookie Recipe – from Gooseberry Patch Game-Day Fan Fare Cookbook
- 1 cup butter, softened
- 1 cup oil
- 1 cup sugar
- 1 cup brown sugar, packed
- 1 egg, beaten
- 3-1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup quick cooking oats, uncooked
- 1 cup crispy rice cereal
- 1 teaspoon vanilla
- 1 cup sweetened flaked coconut
- 1/2 cup chopped nuts
- With an electric mixer, combine the butter and the oil.
- Add the granulated sugar and the brown sugar until smooth and fluffy.
- Beat in the egg and the vanilla.
- Add the flour, salt, and baking soda.
- Stir in by hand the oats, rice cereal, coconut, and nuts.
- Use an ice cream scoop to drop the cookie dough onto parchment paper on a baking sheet.
- I used a very large ice cream scoop, 1/3 cup and baked the cookies at 350 degrees for 16 minutes.
- If you use a regular size ice cream scoop, 1/4 cup, bake 350 degrees for 12 to 14 minutes.
