Do you need an easy crock-pot shredded chicken recipe that you can use to prepare several different meals this week?
I know life can get busy. Most of you know I have 5 kids and their activities. My kids range in age from 11 to 22. They are in 5 different schools. I have 3 dogs which one has diabetes and gets insulin. I do nightly rentals for our vacation rental property. I blog at least 5 or 6 times a week and a husband who travels. Life gets CRAZY, but we still need to eat. Casey, my oldest son, plays highschool football and baseball. Even during these hectic days I try hard to have dinner ready. We may need to eat at 3:00 or 4:00 p.m. or 10:00 or 11:00 p.m. at night, but normally I have something prepared for us to eat. This would not be an easy task or even possible without my crock-pot.
Sunday or Monday is a great time for me to make a Crock-Pot full of this Tex-Mex chicken. I often double this recipe. I use this chicken to make several different meals during the week which you will see below. If your family enjoys Mexican or Tex-Mex food, I highly recommend this chicken. It will save you when you are in a pinch for time.
