Roark Family Update

It has been a long time since I have given you an update on my family.  I am a real person with lots of struggles just like you.  Having hectic family schedules is why my blog has developed into easy recipes.  This summer is no different.  We sold our house and will be downsizing.  If moving were not enough, we planned our family vacation a year ago.  It is coming up soon.

Dream Cruise To Alaska

We are taking a dream cruise to Alaska, which cannot be changed.  We have been looking forward to this fabulous vacation.  I promise to blog all about it on my travel blog, Our American Travels.  I am counting down the days to our vacation and our big moving day.  So much has to be done between now and then.

The appraiser was here this week.   We had to leave for a four-hour inspection.  Leaving the house for that long is always a challenge with two dogs and a special needs son.  Please keep my family in your prayers as we downsize our home and move.

Update on Carly Roark

Carly, our oldest daughter, is finishing up her third year of medical school.  She moved this week to a small town three hours away to work on her Family Practice rotation.  She has a big test to end her third year of medical school the morning we fly out on vacation.  She will go straight from the test to the airport.  Hopefully, it will all work out.

Update on Casey Roark

Casey, our oldest son, has been in Europe on a European Study Tour with his college.  After three long weeks, he arrived safely home last night.  I have missed him so much and was excited to see him but not as much as Caleb.  When Caleb, our special needs son, saw Casey he ran to him as fast as he could and almost knocked him on the floor.  It was a moment I wish I could have had on camera.   Caleb had been pretty upset with Casey for leaving.  He did not understand why he was leaving and why for so long.  He was moping around the house for most of the three weeks.  Seeing Caleb greet Casey reminded me of how God will welcome us HOME one day.  Welcom Home Casey from Europe

Caleb our special needs son and Casey’s twin brother has been doing well.  He is always extremely excited when all our family is together.  He is one happy camper this morning.

Jonah and Diana our youngest two children are doing good too.  Jonah will be graduating high school this year.  Diana will be going into the 9th grade.

I will be blogging this summer but not as much as normal.  I am going to try hard to add a new post to both Recipes for our Daily Bread and Our American Travels once a week.  I will be on Facebook, Pinterest, and Instagram daily.  Be sure to follow me on my social media.  I will respond to your comments.

Dressing and Dips

My family raves about these dressings so much I used them to make several recipes.  Underneath each dressing recipe, you will find other recipes I made using the dressings.  If you think these dressings are just for salads, you need to try them on sandwiches or use them to dip your chicken, fries, vegetables and more.

Copycat Outback Ranch Dressing

Outback copycat Ranch Dressing #Dressings #Dips

Why do you need this Copycat Outback Ranch Dressing?  The flavor is outstanding, and it can be used on so many things.  The ingredients include:

  • Hidden Valley Ranch salad dressing mix (Buttermilk Recipe), mayonnaise, buttermilk, black pepper, paprika and garlic powder

See full recipe here.

Recipes I made using Copycat Outback Ranch Dressing:

Bacon Ranch Pasta Salad

Cayenne Ranch Dressing

Best Cayenne Ranch Dressing Made With A Copycat Outback Ranch #Dressings #Dips

I used my homemade copycat Outback Ranch dressing to create this Cayenne Ranch.  It is creamy, tangy and has a little kick.  To the Copycat Outback Ranch Dressing ingredients above, I added Cayenne and Hot Sauce.  This is my favorite dressing.  I not only eat it on all my salads but also on my sandwiches and burgers.  I dip everything in this Cayenne Ranch too.  I believe cardboard would taste delicious if it were covered in this Cayenne Ranch Dressing.  Do not worry; I am not going to try the cardboard, but I am telling you I love this Cayenne Ranch.

Cayenne Ranch Chicken Grilled Cheese includes bacon, Monterey Jack cheese, Cayenne Ranch, and a cooked chicken breast I butterflied. SEE video on post.

  1. Hi Diane!
Thanks for the recipe ideas and your family update! I always love hearing what you guys are up to. I can’t believe it’s been three years since Carly started medical school – how time flies!
She is amazing. You are like the fifth person I’ve spoken to this summer who is downsizing their homes and moving! I hope it sells fast and that you have many happy days in your new home. I hope you have a great time on your Alaskan cruise. Many years ago, Randy and I did a 15 day Alaskan cruise on the Statendam through Holland America cruise lines. You’re going to love it – it is so beautiful and you will see things that you could only see from being out on a ship.

    Have a Blessed Day,
    Patricia Adolph

    • Patricia,

Thank you for stopping by and leaving me a comment. I always love hearing from you. We are truly excited about moving and our trip to Alaska. 15 days sounds amazing!! We are going on a 7-day cruise but it is with Holland American so it will be similar to your cruise. Our ports include Juneau, Skagway, and Ketchikan.
I will be blogging about our trip on my travel blog, ouramericantravels.com. You will have to check it out.

We still love Branson and will be making a short weekend sometime this summer.

      Many blessings,
      Diane

  2. aw, so many hugs and love to you and your family. Can’t thank you enough for the update and like you with the summer looming here my days are extremely hectic and totally get cutting back a bit, because of it when I need to, as well. Also thanks for the new dip recipes and will so try very soon here. Oh and so excited for your trip to Alaska and cannot wait to hear all about it. Good luck with the house and got my fingers crossed, as well as sending extra good thoughts and prayers your way now.

    • Janine,

Thanks for stopping by to see my family update and dressings and dips recipes. You are always so encouraging. I hope you are having a great summer and you have an amazing time at Disney World. We book a Disney Vacation in January. We have always wanted to go during the winter when it was less crowded and after all these years it is working out. YEAH! You will have to write about all the new things we will not want to miss.

      Many many blessings,
      Diane
