CARAMEL STUFFED GINGERBREAD COOKIES

You can smell Christmas in the air with these Caramel Stuffed Gingerbread Cookies. 

These soft baked Molasses Gingerbread cookies are stuffed with gooey caramel.

Because these Gingerbread cookies have ooey-gooey caramel centers, they are best served warm, straight from the oven or reheated in the microwave.  The flavorful spices and gooey caramel center make these Gingerbread cookies a special holiday treat.

STEP 1: Whisk Dry Ingredients

  • Use a whisk in a large bowl to combine the flour, ginger, cinnamon, cloves, and baking soda and set aside.

STEP 2: Butter and Sugar

  • With an electric mixer, cream butter, and sugar.

STEP 3: Egg and Molasses

  • Beat in egg and the molasses
    • TIP: spray measuring cup with light cooking spray before measuring the molasses.

STEP 4: Add Dry Ingredients To Wet Ingredients

  • Slowly add the whisked flour, ginger, cinnamon, cloves, and baking soda to the butter and sugar cream mixture.

STEP 5: Make One Tablespoon Size Dough Balls

  • Form a one tablespoon size cookie dough ball.
    • TIP: I use a small 1 tablespoon size ice cream scoop for the cookies.

STEP 6:

  • Flatten the cookie with your fingertips.

STEP 7: Add One Kraft Caramel

  • Add one caramel to the top of the flattened cookie.

STEP 8:

  • Use a one tablespoon scoop to make another cookie and flatten it.

STEP 9: Add Second TB Cookie Dough Size On Top Of Caramel

  • Add the second cookie on top of the other cookie with the caramel.
    • Seal the edges by pressing them together.

STEP 10: Seal Cookies and Form A Ball

  • Roll the cookie gently in your hands to form a ball.

STEP 11: Dip Cookie Dough Balls in Sugar

  • Dip the tops of the cookies in sugar before placing them on the cookie sheet.

STEP 12: Line Cookie Sheet With Parchment Paper

  • Place them two inches apart on a cookie sheet line with parchment paper.

STEP 13:

  • Bake the larger cookies for about 15 minutes.
    • Do not over bake. They will be soft to the touch.

TIPS:

  • These cookies need to be eaten warm because the caramel will harden when cooled.
  • To warm the cookies, place ONE in the microwave for 10 seconds.

CARAMEL STUFFED GINGERBREAD COOKIES

Caramel Stuffed Soft Gingerbread Cookies

Ingredients

  • 3 cups all-purpose flour
  • Three teaspoons ground ginger
  • 1 teaspoon baking soda
  • One teaspoon cinnamon
  • One teaspoon cloves
  • 1 cup butter, softened
  • 1 – 1/2 cups sugar
  • One egg
  • 1/4 cup molasses
  • sugar for dipping the tops of the cookies in before baking
  • 30 Kraft caramels to stuff inside the cookies

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine flour, ginger, cinnamon, cloves, and baking soda and set aside.
  3. With an electric mixer, cream butter and sugar.
  4. Beat in egg and the molasses (spray measuring cup with light cooking spray before measuring the molasses.)
  5. Add in the flour, ginger, cinnamon, cloves, and baking soda to the cream mixture.
  6. Use a scoop to form the cookie; I use 1 TB scoop for the cookies.
  7. Flatten the cookie with your fingertips.
  8. Add one caramel to the top of the flattened cookie.
  9. Use a one tablespoon scoop to make another cookie and flatten it.
  10. Add the second cookie on top of the other cookie with the caramel.
  11. Seal the edges by pressing them together.

  14. Place them two inches apart on a cookie sheet line with parchment paper.

  1. Omg, I never would have thought to stuff gingerbread cookies with caramel. But wow these look out of this world.
