My twin boys are now 17. One of my twins, Caleb, has special needs and did not learn how to walk until he was 2-1/2 years old. I would set him on the counter and bake with him to help with his memory and motor skills. Homemade cookie dough is easy to prepare and tastes so much better than the store-bought cookies. Why not make extra cookie dough ahead of time and put the cookie dough into the freezer? When you are mixing up the cookie dough, just make several batches. Freeze cookie dough and have it on hand and ready to bake for school, or a neighbor, or to serve to last-minute guest, or to treat your kids to something special. Whatever the reason, you will always have dough ready to pull out of the freezer and bake.
You DO NOT want to freeze dough all mashed together in one large container or one large roll. The dough will be very difficult to scoop out or slice if it is all frozen together. The easiest way to freeze cookie dough is to scoop the dough out individually using an ice cream scoop. Scoop them out just like you would do if you were going to bake them but you can put them closer together on the baking sheet because you are just freezing them and not baking them. The cookies will not spread when freezing them. A good size scoop is a regular ice cream scoop which equals 1/4 cup. Place the scoops on a cookie sheet lined with parchment paper. Allow the dough to freeze for at least three hours. Remove the frozen cookie dough scoops from the cookie sheet, and place them into a large Freezer Zipper Bags. Store them back in the freezer. When you are ready to bake cookies, just place the individual dough scoops on a baking sheet two inches apart and bake.
