I have a goal this year to incorporate more fruits and vegetables in my diet. I am NOT a health nut, but I am sold on all the benefits of fruits and vegetables. I know my body and my family’s body needs them. I am convinced the best way to fight the huge problems with health issues and insurance, is too simple eat more fruits and vegetables. I have been thinking about; why I do not add more fruits and vegetables into my diet and my family’s diet. I think I get frustrated with the same old ways of preparing vegetables. I know that vegetable casseroles like what I grew up on including; my sweet potato, green bean, lima bean, mixed vegetable, and more are delicious, but they are not good for you. I love fresh vegetables, and summertime is the perfect time to add more vegetables to our diets.
