Roark Family Update 

It has been a long time since I have given you an update on my family.  I am a real person with lots of struggles just like you.  Having hectic family schedules is why my blog has developed into easy recipes.  This summer is no different.  We sold our house and will be downsizing.  If moving were not enough, we planned our family vacation a year ago.  It is coming up soon.

Dream Cruise To Alaska 

We are taking a dream cruise to Alaska, which cannot be changed.  We have been looking forward to this fabulous vacation.  I promise to blog all about it on my travel blog, Our American Travels.  I am counting down the days to our vacation and our big moving day.  So much has to be done between now and then.  

The appraiser was here this week.   We had to leave for a four-hour inspection.  Leaving the house for that long is always a challenge with two dogs and a special needs son.  Please keep my family in your prayers as we downsize our home and move.  

Update on Carly Roark

Carly, our oldest daughter, is finishing up her third year of medical school.  She moved this week to a small town three hours away to work on her Family Practice rotation.  Carly has a big test to end her third year of medical school the morning we fly out on vacation.  She will go straight from the test to the airport.  Hopefully, it will all work out.  

Update on Casey Roark

Casey, our oldest son, has been in Europe on a European Study Tour with his college.  After three long weeks, he arrived safely home last night.  I have missed him so much and was excited to see him but not as much as Caleb.  When Caleb, our special needs son, saw Casey he ran to him as fast as he could and almost knocked him on the floor.  It was a moment I wish I could have had on camera.   Caleb had been pretty upset with Casey for leaving.  He did not understand why he was leaving and why for so long.  He was moping around the house for most of the three weeks.  Seeing Caleb greet Casey reminded me of how God will welcome us HOME one day.  Welcom Home Casey from Europe

Caleb our special needs son and Casey’s twin brother has been doing well.  He is always extremely excited when all our family is together.  He is one happy camper this morning.  

Jonah and Diana our youngest two children are doing good too.  Jonah will be graduating high school this year.  Diana will be going into the 9th grade.

I used my homemade copycat Outback Ranch dressing to create this Cayenne Ranch.  It is creamy, tangy and has a little kick.  To the Copycat Outback Ranch Dressing ingredients above, I added Cayenne and Hot Sauce.  This is my favorite dressing.  I not only eat it on all my salads but also on my sandwiches and burgers.  My family dips everything in this Cayenne Ranch too.  Cardboard would taste delicious if it were covered in this Cayenne Ranch Dressing.  Do not worry; I am not going to try the cardboard, but I am telling you I love this Cayenne Ranch.

Casey’s Kickin’ Chicken Sauce

What is Casey’s Kickin’ Chicken Dipping Sauce?  How can you use it to add a little spice to your life?

Casey is my oldest son who is now 19 years old.  Several years ago he came up with this sauce.  Casey’s Kickin’ Chicken Sauce goes well with everything including a boring sandwich.  It will kick it up.  It is great to dip baked or fried chicken tenders, fried fish, quesadilla, or as a vegetable dip.  One of my favorite ways to use it is in a fish taco.  I blacken my fish and add some coleslaw with Casey’s Kickin’ Chicken Sauce, and life is delicious.

    Thanks for the recipe ideas and your family update! I always love hearing what you guys are up to. I can’t believe it’s been three years since Carly started medical school – how time flies!
    She is amazing. You are like the fifth person I’ve spoken to this summer who is downsizing their homes and moving! I hope it sells fast and that you have many happy days in your new home. I hope you have a great time on your Alaskan cruise. Many years ago, Randy and I did a 15 day Alaskan cruise on the Statendam through Holland America cruise lines. You’re going to love it – it is so beautiful and you will see things that you could only see from being out on a ship.

      Thank you for stopping by and leaving me a comment. I always love hearing from you. We are truly excited about moving and our trip to Alaska. 15 days sounds amazing!! We are going on a 7-day cruise but it is with Holland American so it will be similar to your cruise. Our ports include Juneau, Skagway, and Ketchikan.

      We still love Branson and will be making a short weekend sometime this summer.

Can’t thank you enough for the update and like you with the summer looming here my days are extremely hectic and totally get cutting back a bit, because of it when I need to, as well. We book a Disney Vacation in January. We have always wanted to go during the winter when it was less crowded and after all these years it is working out. YEAH!
