MAKE BEST NEW ORLEANS WHITE CHOCOLATE CREME BRULEE

I am not going to tell you this White Chocolate Creme Brulee is easy to prepare, but I am going to tell you it is worth every minute you spend making it.  I am also going to teach you how to make this extra special dessert. 

My family loves this White Chocolate Creme Brulee.  

If crème brûlée is on a restaurant menu, we usually have to order one.  We also fight over who is going to crack the topping and who gets the last creamy bite.  This White Chocolate Creme Brulee recipe is from one of my absolute favorite cookbooks called New Orleans Classic Desserts by Kit Wohl, see below.  In this book, you will find a collection of dessert recipes from famous restaurants all over New Orleans including this White Chocolate Creme Brulee from Arnaud’s.  The cookbook has beautiful pictures and excellent desserts.  If you love the desserts that New Orléans is famous for, you will love this cookbook.

Use 8-ounce Ramekins

These world-class restaurants and their famous desserts do not need improving.  I made some minor changes.  My creme brulee was made using 8-ounce ramekins instead of 4-ounces.  The original recipe was for regular crème brûlée.  To kick it up, I added 1 cup of white chocolate chips to make a White Chocolate Creme Brulee.

Find The Prize Under The Sweet Crunchy Topping

Breaking the sweet, crunchy topping to find the prize of the silky smooth, creamy texture underneath is part of this mouth-watering experience.  It only has five simple ingredients which include egg yolks, sugar, heavy cream, vanilla, and dark brown sugar, which I used light brown sugar.  Both light or dark brown sugar will make that incredible crunchy top that creme brulee is famous for. 

The Custard Includes Simply Ingredients

The ingredients are very simple, but the technique is what can give people a challenge.  Adding the warm heavy cream to the eggs is not that hard when you use your electric mixer to keep the air circulating.  This prevents the eggs from scrambling. If you enjoy crème brûlée, give this recipe a try.  This is a beautiful dessert to eat with your special loved one. Try this sweet, delicious, dessert with a smooth as silk, melt in your mouth texture with your special loved one.

 1st STEP:  HEAT OVEN & BEAT EGG YOKES

Preheat the oven 250 degrees

  • Beat the egg yolks and sugar with an electric mixer at medium speed.
  • Set aside.

2nd STEP:  Heat Heavy Cream

  • In a saucepan, bring the heavy cream to a boil.  Stir constantly!
  • As soon as you see bubbles, remove it from the heat immediately.

TIPS:

  • I use a large microwave-safe measuring cup to measure the heavy cream and then bring it to a boil in the microwave. It will take about 3 minutes. As soon as you see it beginning to boil, turn the microwave off. I like heating my milk this way because I know it will not stick to the bottom of the pot and burn. Use extreme caution when removing the heavy cream from the microwave.
  • Stir the heavy cream before removing it from the microwave; this will release any air bubbles that might pop.

3rd STEP:

  • After removing the thick cream from the microwave, add the chocolate and stir until the chocolate has melted.

4th STEP:

  • With the electric mixer on medium, slowly add the warm heavy cream and melted chocolate to the egg and sugar mixture.

TIP:

  • By doing this slowly, with the electric mixer still running, you will prevent scrambling your eggs.

5th STEP:

  • Add the vanilla and allow the mixer to run on medium until the mixture is completely cooled.

 

6th STEP:

  • Prepare two 9×13 inch baking dish by lining the bottom and sides with parchment paper.  This prevents the ramekins from sliding around.

7th STEP:

  • Pour the cooled mixture into ramekins (oven safe).
  • I used four, 8-ounce ramekins.
  • The recipe calls for six, 4-ounce size ramekins. Either way, it will still make an excellent treat.

8th STEP:

  • Put the ramekins into the baking dishes.
  • Be sure to add warm water until it reaches halfway up the sides of the ramekins.

9th STEP: Bake White Chocolate Creme Brulee

  • Bake the 8-ounce size at 250 degrees for 1 hour and 35 minutes or the center is not runny.
  • The crème brûlée will become thicker after you refrigerate it for two hours.
  • Bake the 4-ounce size for 50 minutes.

TIP:

Every oven cooks at differently.  The center of this white chocolate creme brulee should slightly jiggle.  Insert a toothpick in the center.  If it comes out watery, it is not ready.

10th STEP: Let White Chocolate Creme Brulee Cool

  • Remove the ramekins from the pan and cool to room temperature.
  • Refrigerate until chilled for 2 hours.

11th STEP: Add The Sugar Topping

  • Sprinkle the top of each dessert with the sugar/brown sugar mixture.

12th STEP:  Broil Creme Brulee

  • Next, put the crème brûlée back in the oven under the broiler. WATCH IT CAREFULLY!  The sugar will brown fast.  Remove as soon as the sugar melts and slightly darkens.
  • Last, allow the sugar crust to cool; it will harden.

Ingredients

  • Six large egg yolks
  • 1/3 cup sugar
  • 2 – cups heavy whipping cream
  • 1 cup of white chocolate chips, I use Ghirardelli
  • Two teaspoons pure vanilla extract
  • 2 TB Light brown sugar mixed with 2 TB granulated sugar for the crust

O.K. IT IS CONFESSION TIME

It was about 7:00 p.m., and I was standing in the kitchen taking pictures of this beautiful Creme Brulee.  I finished taking pictures, and I took a step backward.  At the very same time, my husband was coming in the door.  A couple of my kids ran to the door along with our dog.  Our 60-pound baby, Cocoa, a black Lab, is not used to her big body, and neither am I.  She had been outside all day, and I had just let her in the house. She tore off toward the door to greet her daddy.  As she did and as I took my step backward well, I know you know what happened.

I Hit The Floor

Somehow, I tripped over her and hit the floor.  I landed on my left hip and left arm, and my head hit the kitchen island.  After my husband and kids finally made it back to the kitchen, they were asking me a million questions that I could not answer.  Lastly, I slowly got up and tried to figure out what had happened.  Yes, I am O.K. My finger is swelling, my elbow hurts, and my head is swimming a little, but my injuries are not enough for me not to work on this post.  We are talking about it now and laughing.  I hope it makes you smile too. Once you know everyone is O.K., it ‘s nice to laugh at the crazy zoo we all live in at times.
