This is such an Easy and Delicious Sausage Spinach Egg Casserole.  It is made using Crescent Rolls.  




I love breakfast, so I try new breakfast recipes all the time.  An easy and delicious breakfast dish is my Ham, Sausage, & Egg Breakfast Casserole.  It is made with Crescent Rolls.  YUM!  It also includes sausage, ham, eggs, cheese, and seasonings.  This time, when I made it,  I added two cups of fresh spinach.  Since spinach does not have much flavor, I increased the seasoning.  It turned out even better than the original Ham, Sausage, & Egg Breakfast Casserole.  It is also healthier since it includes 2 cups of fresh spinach.

I am a morning person.  If I try to get a few minutes of extra sleep, I just start thinking about all the things I could be doing.  I might as well get up and start my day, so I do.  One of the things I enjoy each morning, besides my coffee, is a good breakfast.  I have always loved breakfast.  If I am going to skip a meal, I guarantee you it will not be breakfast.  It just gives me the energy I need to get everything done each day.  I have a hard time concentrating with my stomach growling.  I also have little energy in the morning if I do not eat breakfast.

When my kids were younger, I started adding spinach to most dishes that included cheese.   Most kids love cheese and cheese help hide the spinach.  Now that they are older, I do not have to cover up the spinach.  They love it!  They also really enjoy this Sausage Spinach Egg Casserole.

Breakfast Sausage, Spinach, & Egg Casserole

  • One package Pillsbury Crescent Rolls
  • 1 pound sausage browned and drained
  • 1 cup chopped ham you could also use bacon
  • 2 cups grated Cheddar Cheese
  • 2 cups packed fresh spinach
  • 6 eggs
  • 3/4 cup milk
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon black pepper


  • Unroll the Crescent Rolls and Layer them in the of a 9 x 13-inch baking dish that has been sprayed with a cooking spray.
  • Cook and drain the sausage.
  • Layer the sausage and ham on top of the Crescent Rolls.
  • Next, layer 2 cups packed fresh spinach.
  • Add 1 cup of cheese on top of the meat and spinach.
  • Beat the eggs, milk, mustard, and pepper.
  • Add the eggs on top of the meat, spinach, and cheese.
  • Top the casserole with 1 cup of shredded cheddar cheese.
  • Bake 350 degrees for 25 to 30 minutes or until the center is set.

  1. This looks fantastic Diane. When we go camping with the whole extended family, I love making breakfast meals like this (in the trailer). I put it all together pop it in the oven and forget it. Easy clean up and everyone likes it. Going to try this one in a few weeks when we head out again.

      Spinach is so good for you and I love covering it with cheese. When my kids were little they never questioned love it because of the cheese, today they eat spinach in everything.
