Boneless chicken breasts are easy to find, low in fat, and high in protein.  Because they are low in fat, chicken breasts are the most popular part of a chicken.  Although most of us eat chicken breast all the time, it can be challenging to cook a chicken breast to the proper doneness.  Chicken Breasts are unevenly in shape, which means it is easy to undercook or overcook them—Cook the best chicken with these secrets and tips.

Chicken needs to reach a safe internal temperature of 165 degrees Fahrenheit.  You can reach the 165-degree chicken doneness even faster with a thinner chicken breast.  No matter what method you use for cooking your chicken breasts, it needs to be removed from the heat around 160 or even 155 degrees F. depending on the size of your protein.  The chicken will continue to cook, and it will reach the designed 165 degrees Fahrenheit when letting it rest 5 to 10 minutes.

Cook Chicken Faster and More Evenly

First Hack for Cooking Chicken Breast Faster:

To cook chicken breast more evenly, place the chicken breast flat on the surface of the cutting board. Place your hand over the chicken with your fingers facing up. The palm of your hand should be flat on the chicken.

  • With a shape knife, slice the chicken breast horizontally, cutting the chicken breast into two pieces.  Splitting the chicken works exceptionally well for larger pieces of chicken breast.  Cutting the chicken in two equal parts with similar thickness will allow the chicken to cook much faster. Plus, you will be getting an average portion size.  Eating an average portion size will cut down on waste and calories.

Second Hack for Cooking Chicken Breast Faster:

  • Place chicken breasts on a baking sheet leaving space between each of the pieces of chicken.  Next, place a flexible cutting mat or plastic wrap on top of the chicken.
  • Using a mallet, cast-iron skillet, or anything else substantial, pound the chicken breasts until they are even in size.  Focus on beating the thickest part of the chicken.

Tips for Sauteing Chicken Breast

To Cook Chicken Breast On The Stove, you will need the following:

  • A large frying pan, the chicken breast, should never touch each other.
  • A spatula or tongs
  • A meat thermometer
  • Aluminum foil
  • You will need a tablespoon of oil per chicken breast. I usually use avocado oil. It is healthier for you plus handles high heat well.
  • Boneless, skinless chicken breasts
  • Salt, pepper, and granulated garlic (combine the seasoning in a small bowl, so you do not have to touch the container after you have touched raw chicken.)

First Step to Cooking Chicken Breasts

  • The first step to cooking chicken breasts is to trim the fat.  Place the chicken on a cutting board. Trim the fat and look for any bones that are left in the chicken.  Use a sharp knife, when trimming chicken.

Tip:  The easiest way to trim chicken, especially if you do not have a sharp knife is to use kitchen shears.

  • After you have finished trimming the chicken breasts, dry them with a disposable paper towel.
  • Season the chicken well with salt, pepper, and granulated garlic or your favorite seasonings.

Saute Chicken Breasts Stove Top Method

Sauteing is the fasting way to put dinner on the table.  It is direct heat, high heat, cooking method.  You use a small amount of fat in a hot skillet.   One of the fastest ways to prepare dinner is to saute boneless chicken breast.

Second Step: Heat Up The Skillet

  • Heat a frying pan or cast-iron skillet on high heat.
  • Add a tablespoon of oil per chicken breast and move the skillet around to coat the entire bottom of the skillet with oil.
  • The oil will get legs on it when it is hot.  In other words, you will be able to see streaks in your skillet.  At this point, add your chicken.  If you wait longer, your skillet will start smoking.
  • If you pan gets too hot and starts smoking, cut the heat and let it cool down just a little.
  • The skillet needs to be hot before adding your chicken breast.  A hot skillet will allow you to get a golden sear on the chicken.

Third Step: Add The Chicken Breast

  • Add the chicken breast once the oil starts to shimmer.  You will see streaks in the pan.
  • Once your chicken is in the skillet, please don’t touch the chicken breasts for at least 3-5 minutes or until it forms a golden crust.  You will know this by looking at how far the chicken is done up its side.  The chicken breast needs to be 1/2 to 3/4 done cooking on the first side before turning it over.  You can see the chicken turn white on the sides.  Once the chicken creates a golden-brown crust, it will not stick to the skillet, and it will be easy to flip over.
  • If the chicken sticks to the pan, it’s not ready to be flipped.  Cook it another minute and see if it has been released from the skillet.
  • Once the chicken releases from the skillet, flip it over using a spatula or tongs.
  • Continue cooking the second side for 3 to 4 minutes.

Fourth Step: Use Meat Thermometer

  • Use your meat thermometer.  Check the thickest part of the breasts with the meat thermometer. When the temperature reaches 160  degrees Fahrenheit, it is ready.
  • Remove the chicken from the pan at 160 Fahrenheit.  It will continue to cook and reach 165 degrees F. while resting five to ten minutes.

Tips: Never cut into your chicken or any meat to see if it is done!  You will release the juices and not get a moist piece of chicken.

Fifth Step: Sauce

The sauce adds lots of flavors and can save a poorly cooked piece of chicken.

Use the goodies stuck to the bottom of the pan to make a sauce.  Add a cold liquid to your hot skillet.  The cold liquid will release the goodies from the bottom of the pan.   Now, start scraping the bottom of the pan.  The goodies stuck to the skillet should easily release.  This procedure is called deglazing the pan.   You can add any cold liquid and ingredients to make a sauce.  Once you finish your sauce, add your chicken back to the skillet to keep it moist and help soak up some of the sauce.

When you are preparing chicken breast in the oven, you are not going to get the sear on the chicken.  But, you do not have to watch the chicken breast while cooking in the oven.  It can be more convenient and a little easier than prepare chicken in the skillet.  It is also the easiest way to cook a lot of chicken breasts at one time.

Use Meat Thermometer

  • Use your meat thermometer when cooking chicken breast in your oven.  Check the thickest part of the breasts with the meat thermometer. When the temperature reaches 160 degrees Fahrenheit, remove it from the oven.
  • Remove the chicken from the pan at 160.  It will continue to cook and reach 165 degrees F. while resting five to ten minutes.

Tips: Never cut into your chicken or any meat to see if it is done!  You will release the juices and not get a moist piece of chicken.

How long does it take to bake chicken breasts?

It will take about 20 minutes to bake chicken breast at 375 degrees Fahrenheit, but all chicken breasts are different in size.  You will need to use your thermometer and bake the chicken to 160 degrees F.  The chicken will continue to cook to 165 degrees F. once it is removed from the oven.  Allow the chicken to rest at least five minutes.

Grilled Chicken Breast

Before adding the chicken to the grill, crank up the heat.  Burn off all the stuff on the grates and the coals.

  • Rub your chicken down with oil.
  • Get the grill extremely hot before adding the chicken breast rubbed with oil.
  • Leave the chicken alone and let it sear two to four minutes.
  • Once the chicken easily releases from the grates, turn it 90 degrees.
  • After a couple of minutes, turn the chicken over and turn the heat way down.
  • At this point, the chicken should be 50 to 75 percent done.
  • Cook until the chicken breast reaches 160 degrees F.  Remember, it will continue to cook while resting once removed from the grill.

Can raw chicken sit out for a couple of hours?

If your room temperature is less than 90 degrees, you can let chicken set out for one to two hours.  To be safe, never cook chicken that has been sitting out longer than two hours.  Never cook chicken that has been sitting at room temperature overnight to thaw.

Why soak your chicken in a brine?

Brining is soaking your chicken in a mixture of salt and water.  It adds moisture, tenderizing the chicken, and removes bacteria.  Place the chicken in a brine solution and refrigerate overnight in the refrigerator for best results but no longer than twelve hours.  As a general rule, brine your meat one hour per pound.  If you brine your meat too long, it will be too salty.

Salt to Water Ratio For Brine

For a basic brining recipe of salt and water,  you will need one tablespoon of salt per cup of water.  Add a cup of water with a tablespoon of salt to your meat until the meat is completely covered.  Cover the container and refrigerate.

Kosher or sea salt works well for brining meat because it dissolves well in water.

After brining, do you need to rinse the chicken?

  • YES!  Take your chicken out of the brine solution, and get rid of the brine.
  • Rinse the chicken under cold water.
  • Place your chicken on a platter and pat it dry with paper towels.
  • At this point, season the chicken as you normally would.
