Yes!  It is safe to smoke in your oven.

Smoking your roast adds a fantastic flavor.  Using your indoor smoker in your oven will keep your temperature consistent at 225 degrees F.  Smoking your roast nice and slow will make a more tender roast and adds fantastic flavor.  

The King Comes With A Price Tag

The prime rib claims center stage during the holiday season for an excellent reason.  It is the king of beef cuts.

It is an expensive piece of meat but oh so worth every bite you put into your mouth.  Because it is costly, I wanted to give you step by step details to help you make a fabulous prime rib.

You can put the roast in an oven, using these same instructions without a smoker and it will be amazing.  But using an Indoor Smoker adds an incredible flavor dimension that oven roasting won’t.

What is Prime Rib?

A standing rib roast, also known as prime rib, is a cut of beef from the primal rib.

Prepare Your Prime Rib

  • Trim the excess fat off the outer roast down to 1/4 inch.
  • Cut 1 inch crisscross pattern in fat, be careful not to cut down to the meat.

  • After removing the fat, I rinse under cold water and pat dry.
  • Rub two tablespoons of salt around the prime rib.
  • Refrigerate uncovered at least 24 hours to a couple of days before cooking or smoking.

Make A Paste or Rub For Your Prime Rib

A paste is merely a wet rub.  Just blend all of the ingredients in a food processor. It sticks easier to the meat, and when using smoke, liquid helps the flavor adhere to the meat.

  • Remove the leaves from the rosemary, thyme, and oregano.

  • Use a food processor or mini food processor, and mince the butter, garlic, fresh rosemary, fresh thyme, fresh oregano, and pepper.

Rub Your Rib

  • Remove your prime rib from the refrigerator.
  • Rub your rib with the rub you made using the butter, garlic, rosemary, thyme, oregano, and pepper.

Use A Meat Thermometer

Place the meat thermometer in the thickest part of the roast.

The key is keeping the temperature in the smoker at 225 – 250 degrees throughout the cooking process.

  • 125 to 130 degrees F for rare
  • 135 to 140 degrees F for medium rare
  • 150 to 155 degrees F for medium

Use Your Indoor Smoker In Your Oven

HOW TO COOK PRIME RIB

  • Since it will take about 45 minutes per pound to smoke your prime rib, place your indoor smoker in your oven to help keep a consistent temperature.
  • The total time you cook your prime rib will depend on thickness, how many pounds, plus if you cook it on 225 or 250 degrees F.
  • Preheat your oven to 250 degrees, 225 degrees if your oven will go that low.
  • Place a meat thermometer probe in the center of the thickest part of the meat.
  • Keep an eye on your meat thermometer.
  • Remove from the oven when it reaches the following temperatures.

To reach these temperatures,

  • 125 to 130 degrees F for rare+
  • 135 to 140 degrees F for medium rare
  • 150 to 155 degrees F for medium

Remove Prime Rib from the heat when it reaches:

  • 115 degrees F for rare
  • 125 degrees F for medium rare
  • 140 degrees F for Medium

You should be able to cook the outer edges to medium while the center of the prime rib remains rare.   So you can please each guest without overcooking the roast.

The Prime Rib below was cooked medium rare.  After smoking it on the stovetop for 30 minutes, it was baked in the oven until it reached 125 degrees F.  Once it reached 125 degrees F, it was removed from the oven.  We left a digital thermometer in the roast.  The temperature continued to rise to 136 degrees, medium rare.  The temperature of the roast rose 11 degrees once removed out of the oven.

Prepare Your Smoker

You can put the roast in an oven, and it will be amazing, but smoking will add an incredible flavor dimension that oven roasting won’t.

  • To prepare your Cameron Indoor Smoker, add 1-1/2 tablespoons of any fruitwood chips to the center of your smoker.  I am using cherry.

  • Cover the drip pan with heavy-duty aluminum foil and place it on top of the smoking chips.
  • Spray the roasting rack with a cooking spray and place it on top of the drip pan.

Place Prime Rib in Smoker

  • Place the Prime Rib in the Smoker on the roasting rack.
  • Completely cover it with the butter herb mixture.
  • Add your meat thermometer.

Tent The Prime Rib

Tent a large piece of heavy-duty foil over the prime rib roast and the Cameron smoker.

Smoker On Stove Top

Place the smoker with the prime rib, meat thermometer and covered with foil, over medium-high heat.  Leave one corner of the foil open so you can see when the woodchips catch and start to smoke.  Close the opening when a steady stream of smoke is coming from the corner which was left open.

Continue smoking your prime rib on your stove top on medium heat for 30 minutes.

Place Prime Rib In Oven

  • After 30 minutes, place your prime rib in your Cameron smoker in a 225 degree F preheated oven.
  • Sit back and watch your meat thermometer until it reaches desired doneness.  SEE THE CHART ABOVE to remove your prime rib before it reaches the doneness you want.  The roast will continue to cook once it is removed from the oven.

Place In A Warm Spot

Remove roast from oven and place it in a warm spot in the kitchen to rest for at least 30 minutes to one hour.

20 Minutes Before Serving

  • Heat oven to the highest possible temperature setting, 500 to 550 degrees F.  260 degrees C.
  • Ten minutes before guest are ready to be served, remove foil.
  • Place roast back in a hot oven on the lowest rack.
  • Cook until well browned and crisp on the exterior, 6 to 10 minutes.  The fat will brown quickly.  WATCH IT CLOSELY.  DO NOT LEAVE THE OVEN.
  • Remove from oven, carve, and serve immediately.

Carving

  • Place the roast on a cutting board and slice into desired thickness usually 3/4 inch slices.

Ingredients

  • 5-6 pounds bone prime rib (boned and tied)
  • 2 Tablespoons Salt
  • 1 cup butter, softened
  • 10 cloves garlic
  • 3 Tablespoon thyme, fresh
  • 3 Tablespoon oregano, fresh
  • 1 teaspoon pepper
  • 3 Tablespoon rosemary, fresh

Instructions

Prepare Your Prime Rib

  • Trim the excess fat off the outer roast down to 1/4 inch.
  • Cut 1 inch crisscross pattern in fat, be careful not to cut down to the meat.
  • After removing the fat I rinse under cold water and pat dry.
  • Rub 2 tablespoons of salt around the prime rib.
  • Refrigerate uncovered at least 24 hours to a couple of days before cooking or smoking.
  • Preheat the oven to 225 degrees.
  • Cover drip pan with foil.
  • Spray the roasting rack with cooking spray.
  • In a small food processor combine softened butter, garlic, thyme, oregano, rosemary, salt, and pepper.
  • Rub all of the butter and herbs on the outside of your prime rib and place in a roasting rack on the Cameron smoker.
  • Place a meat thermometer in the center of your prime rib roast.
  • Cover the roast and smoker with a large piece of aluminum foil.
  • Leave one corner of the foil open.
  • With your stove on medium heat, place the smoker on top of it.
  • Watch for a steady stream of smoke to come out of the open corner.
  • Place the prime rib in the smoker in the oven preheated 225 degrees F oven.
  • Watch your meat thermometer.
  • Bake until it reaches an internal temperature of 125 degrees for medium rare.  The roast will continue to cook when removed from the oven.
  • Remove from oven and let it rest with foil for at least 30 minutes to an hour.
  • The temperature will rise to 135 to 137 degrees for a medium rare prime rib.
  • 20 minutes before serving your prime rib, heat your oven to 500 degrees F.
  • Remove the foil from your roast and place it in the hot oven.
  • DO NOT LEAVE YOUR OVEN.  WATCH IT CLOSELY!
  • The outside of the roast, the fat, will brown in 6 to 10 minutes.
  • Remove from the oven, carve, and serve.

Notes

The key is keeping the temperature in the smoker at 225 – 250 degrees throughout the cooking process.

  • 125 to 130 degrees F for rare
  • 135 to 140 degrees F for medium rare
  • 150 to 155 degrees F for medium

Use Your Indoor Smoker In Your Oven

  • Since it will take about 45 minutes per pound to cook or smoke your prime rib, place your indoor smoker in your oven after smoking it on the stove on medium for 30 minutes.
  • Preheat your oven to 250 degrees, 225 degrees if your oven will go that low.
  • Place a meat thermometer probe in the center of the thickest part of the meat.

To reach these temperatures, Remove Prime Rib from the heat when it reaches:

115 degrees F for rare

125 degrees F for medium rare

140 degrees F for Medium

Use fresh herbs for best results, but if you use dried herbs only use 1 tablespoon of each one instead of 3 tablespoons of each fresh herb.

Delicious Horseradish Sauce

  • 1 cup (8 ounces) sour cream
  • Four tablespoons prepared horseradish
  • One teaspoon coarsely ground pepper
  • Two tablespoons Worcestershire sauce
  • 1/2 teaspoon dry mustard
  • Two teaspoons Cajun seasoning

  1. I have never made prime rib, but my husband is a big fan of red meat meals. So I am going to keep this in mind now as I know he would most definitely enjoy this meal. Hoping you and your family had wonderful Christmas and sending New Year’s wishes you way now, too!! 🙂
