COUNTRY FRIED STEAK BROWN GRAVY

Country fried steak is a staple in the south.  This Country Fried Steak is even better because it has a Cajun twist.

For decades, I have used the same basic recipe for Country Fried Steak from one of my favorite cookbooks; Miss Daisy Celebrates Tennessee.   It is called Beefsteak with onions in this cookbook.  To this steak recipe, I add garlic, bell pepper, Worcestershire sauce, Kitchen Bouquet, Cajun seasonings, and a few other ingredients to make it more of a Cajun Country Fried Steak with Brown Gravy.

COUNTRY FRIED STEAK BROWN GRAVY

First Step:  Flour Mixer

  • In a bowl, combine the flour, salt, pepper, and Cajun seasoning.

Second Step:  Wet Ingredients

  • In a separate bowl, beat the eggs with the milk.

Third Step:  Dip in Wet ingredients and then in Dry ingredients and repeat.

  • Dip each piece of the meat into the egg-milk mixture, coat both sides and repeat.
  • Place the meat on an empty plate until ready to fry or directly into hot oil.

Fourth Step:  Heat Oil

  • Heat the oil in a skillet over medium-high heat.  Drop a few drops of flour into the grease.  If it sizzles, it is ready.
  • Place the meat into the skillet and cook until the edges start to brown about 2 to 3 minutes.
  • Turn the meat over and cook for an additional 2 to 3 minutes until golden brown.
  • Remove and drain on a paper towel.

Ingredients

  • 3 pounds cube steak
  • 2 eggs
  • 1-1/2 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons seasoned salt
  • 1 teaspoon black pepper
  • One teaspoon paprika
  • 1 Tablespoon Cajun seasoning
  • Two teaspoons garlic powder
  • 1/2 cup vegetable oil for frying
  • GRAVY INGREDIENTS
  • 1/4 cup oil
  • 1/4 cup all-purpose flour
  • two tablespoons Worcestershire sauce
  • 16 ounces beef broth
  • one tablespoon Kitchen Bouquet (secret ingredients to a fabulous gravy)

Instructions

  • Beat the eggs with 1 cup milk.
  • In a bowl, combine the flour, salt, pepper, and Cajun seasoning.
  • Dip each piece of the meat into the egg-milk mixture, coat both sides.
  • Next, dip both sides of the meat into the flour mixture.
  • Now, place the meat back into the egg-milk mixture and then back into the flour mixture.
  • Place the meat on an empty plate until ready to fry or directly into hot oil.
  • Heat the oil in a skillet over medium-high heat.  Drop a few drops of flour into the grease.  If it sizzles, it is ready.
  • Place the meat into the skillet and cook until the edges start to brown about 2 to 3 minutes.
  • Turn the meat over and cook for an additional 2 to 3 minutes until golden brown.
  • Remove and drain on a paper towel.
  • MAKE THE GRAVY
  • Drain the grease out of the pan.
  • Now, add 1/4 cup of the grease or oil back into the pan.
  • Add 1/4 cup flour evenly over the grease.
  • Whisk together until a golden color.  This is known as a “roux”.
  • Pour in 2 cups of beef broth and whisk together.
  • Mix in two tablespoons Worcestershire sauce and one tablespoon Kitchen Bouquet.
  • Let the gravy come to a boil.
  • The gravy will thicken gradually.
  • If it gets too thick, add splashes of beef broth as needed.
  • Generously season with season salt, pepper, and Cajun seasoning about a teaspoon of each.

Notes

For extra flavor, dice a large onion and bell pepper and add it to the gravy.  Cook it until tender.
