Country fried steak is a staple in the south.  This Country Fried Steak Brown Gravy is even better because it has a Cajun twist. You will love the flavors and your family and friends will be begging for more.

For decades, I have used the same basic recipe for Country Fried Steak from one of my favorite cookbooks; Miss Daisy Celebrates Tennessee.   It is called Beefsteak with onions in the cookbook.  To this steak recipe, I add garlic, bell pepper, Worcestershire sauce, Kitchen Bouquet, Cajun seasonings, and a few other ingredients to make it more of a Cajun Country Fried Steak with Brown Gravy.

What is in this Country Fried Steak Recipe?

For this Country Fried Steak Brown Gravy recipe, you will need 3 pounds cube steak, eggs, milk, flour, seasoned salt, black pepper, paprika, Cajun seasoning, garlic powder, and vegetable oil.  For the brown gravy, you will need vegetable oil, flour, Worcestershire sauce, beef broth, and the secret ingredient, Kitchen Bouquet.

COUNTRY FRIED STEAK BROWN GRAVY

First Step:  Seasoning

  • In a bowl, combine the flour, salt, pepper, and Cajun seasoning.
  • Season the meat too with salt, pepper, and Cajun seasoning.

Season your flour and mix well.  This flour will be used to dredge your steak.

Second Step:  Wet Ingredients

  • In a separate bowl, beat the eggs with the milk.

Dredge your steak in the egg mixture.

Third Step:  Dip in Wet ingredients and then in Dry ingredients and repeat.

  • Dip each piece of the meat into the egg-milk mixture, coat both sides and repeat.
  • Place the meat on an empty plate until ready to fry or directly into hot oil.

Flouring your steak

Fourth Step:  Heat Oil to fry your Country Fried Steak

  • Heat the oil in a skillet over medium-high heat.  Drop a few drops of flour into the grease.  If it sizzles, it is ready.
  • Place the meat into the skillet and cook until the edges start to brown about 2 to 3 minutes.
  • Turn the meat over and cook for an additional 2 to 3 minutes until golden brown.
  • Remove and drain on a paper towel.

Get the vegetable oil hot before adding your steak

  • Next, dip both sides of the meat into the flour mixture.
  • Now, place the meat back into the egg-milk mixture and then back into the flour mixture.
  • Place the meat on an empty plate until ready to fry or directly into hot oil.
  • Heat the oil in a skillet over medium-high heat.  Drop a few drops of flour into the grease.  If it sizzles, it is ready.
  • Place the meat into the skillet and cook until the edges start to brown about 2 to 3 minutes.

  • MAKE THE GRAVY
  • Drain the grease out of the pan.
  • Now, add 1/4 cup of the grease or oil back into the pan.
  • Add 1/4 cup flour evenly over the grease.
  • Whisk together until a golden color.  This is known as a "roux".
  • Pour in 2 cups of beef broth and whisk together.
  • Mix in two tablespoons Worcestershire sauce and one tablespoon Kitchen Bouquet.
  • Let the gravy come to a boil.
  • The gravy will thicken gradually.
  • If it gets too thick, add splashes of beef broth as needed.
  • Generously season with season salt, pepper, and Cajun seasoning about a teaspoon of each.

Notes

For extra flavor, dice a large onion and bell pepper and add it to the gravy.  Cook it until tender.
