This year I have been trying to eat more fruits and vegetables. I know that fruits and vegetables have so many heath benefits, but often it is difficult to get the daily recommended amounts of fruits and vegetables into our diets. To be honest, this Garlic Pesto & Pesto Cream Tortellini Pasta is probably the most healthy recipe my family has ever had. I am not a health nut. We do eat healthy recipes, and I have blogged about several of them lately, but I am from the south. Everyone knows that southern recipes are not always healthy. If you have time, check out my blog, and you will find a variety of recipes. Most of the recipes on my blog will be very easy to make which is a top priority in my house. I truly am trying to eat better and serve my family healthier food. The one thing I like about eating healthy is most recipes are super easy to make. I love quick and easy recipes. This Garlic Pesto was quick, easy, delicious, and super healthy. A winner!
One of the best ways to get loads of vitamins is to eat plenty of green leafy vegetables.
I have never liked pesto which is all green leafy vegetables, so I decided to find a good recipe and kick it up. I adapted this Garlic Basil & Spinach Pesto recipe from Ina Garten’s Pesto Recipe from food Network. This pesto has 3 cups fresh spinach and 2 cups fresh basil. Ina’s recipe called for 5 cups of basil. I always have plenty of fresh spinach on hand that my family loves, so I decided to exchange it for some of the basil. When you have this much green leafy vegetables, I had to find a way to make it taste great. I decided to kick up the garlic.
We get our daily amount of vegetables in our diets with this pesto. It makes 4 cups of extremely healthy leafy vegetables.
Things To Make With Pesto
We ate pesto with several different pastas including fusilli, bow tie, and rotini. They were all good, but this Pesto Cream Tortellini Pasta was our favorite. I used Buitoni Tortellini that was stuffed with spinach and ricotta which was delicious! I love the fresh pasta you can find in the refrigerator section of your grocery store.

- 1/4 cup walnuts
- 1/2 cups pine nuts
- 4 tablespoons chopped garlic – 12 cloves
- 3 cups fresh baby spinach
- 2 cups fresh basil
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 cups olive oil
- 1 cup freshly grated Parmesan
- In a food process, I used my Vitamix, add the walnuts, pine nuts, and garlic.
- Process until smooth about 30 seconds.
- Add the basil and spinach leaves, salt, and pepper.
- Slow pour the olive oil through the top of the feed tube.
- Process until completely blended.
- Add the cup of Parmesan cheese until blended.
