ITALIAN ZUCCHINI BOATS

Italian Zucchini Boats are perfect for Spring and Summer dinners.   This post will teach you how to make each step of this tasty, healthy easy recipe.

Weeknight meals don’t get more scrumptious than this!  Italian zucchini boats are a go-to easy recipe we seem to eat at least once every week or two.  They are perfect for a low carb diet and incredibly flavorful.  Everyone loves them because they taste terrific.

You could use a pizza cheese or Mozzarella cheese or any combination of the cheeses.  The Italian ground sausage adds tons more flavor, but for a healthier recipe, you could use ground turkey.  I too use ground turkey sometimes myself but always add a little extra Italian seasoning, garlic, salt, and pepper.  Ground turkey has no tastes.  You have to kick it up a lot more than sausage, especially Italian sausage.  If you like using Italian sausage, be sure to check out my SAUSAGE MUSHROOM ALFREDO,  Tortellini Alfredo Spinach & Sausage and SLOW COOKER ITALIAN SAUSAGE GREEN BEANS POTATOES.

First Step:

  • Preheat oven to 400 hundred degrees.
  • Spray two 9×13 baking dishes with a cooking spray.

Second Step: Brown Sausage for Zucchini Boats

  • In a large skillet over medium-high heat, brown ground Italian sausage.

Tip:

  • You can use ground beef, regular sausage, or even ground turkey.  If using any of these meats but especially ground turkey, do not be afraid to add additional spices.  Turkey is super bland and needs lots of additional seasonings.

Third Step: Chop Onion

  • Using a mini food processor or a knife, mince or chop the onion in tiny pieces.

Fourth Step: Add the Onion and Seasonings

  • After browning the Italian sausage, add the minced onion.
  • Next, add the seasonings including, Italian seasoning, red pepper flakes, salt, pepper, and granulated garlic.

Fifth Step: Marinara

  • Stir in the Marinara Sauce.  If you are watching your carbs, I have found the best low carb spaghetti sauce is Rao’s.  It is only two carbs in a half of cup and tastes delicious.
  • After stirring in the Marinara sauce, add the Mozzarella or Pizza cheese plus the Parmesan cheese.

Six Step: Prepare Zucchini

  • Wash and cut the ends off the Zucchini.
  • Slice the Zucchini in half horizontally and scoop out the center and seeds with a small spoon.
  • Add the Zucchini to the baking dishes.
  • After adding the Zucchini to the baking dishes, fill each one with the Italian sausage filling.

Seventh Step: Top Each Zucchini Boat with Cheeses

  • Top the filling with the additional Mozzarella or Pizza cheese plus Parmesan cheese.

Eight Step:  Bake Zucchini Boats Covered With Foil

  • With the baking dishes covered with foil, bake for 45 to 50 minutes.  This will depend on how thick your zucchini are.
  • If you are in a hurry, precook your zucchini in the microwave until fork tender before stuffing them with Italian meat filling.
  • Before removing the zucchini from the oven, stick a fork in them.  The fork should go easily into each zucchini boat.

Ingredients

  • 1 pound ground Italian sausage
  • One large onion, finely chopped or minced
  • 1-24-ounce containers spaghetti sauce
  • Two teaspoons Italian seasoning – I use Paul Prudhomme’s Pizza Pasta Magic
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Two teaspoons granulated garlic
  • 1 cup Mozzarella or Pizza cheese
  • 1/4 cup Parmesan cheese
  • TOPPINGS BEFORE BAKING
  • 2 cups Mozzarella or Pizza cheese
  • 1/2  cup Parmesan cheese

Instructions

  • Preheat oven to 400 hundred degrees.

  1. I absolutely love zucchini here. Being Italian heritage, my family was always big on serving zucchini and eggplant, too. As a kid, my dad actually used to grow both in our backyard garden. So I was truly spoiled with all the homemade recipes my mom prepared with them. That you said you not only brought me back with this recipe, but also made me want to give your recipe a try now, too!
