Feeding Family While Trying To Stick To A Diet

If you are on a diet, you know how difficult it is to prepare a meal for your whole family when you are trying to lose weight. Can I get a good Amen? I know I am not the only one who struggles with this issue. Even though I have teenagers and young adults, it is still difficult to feed my family while I try to stay on a Keto low carb diet. I have found that if I keep the foods and flavors my family enjoys, they will eat it.

Low Carb BBQ Sauce

Let’s Talk about Low Carb BBQ Sauce. First of all, I love bbq sauce! Recipes For Our Daily Bread is full of recipes using BBQ sauce. I really have too many to list but here are a few;

In order for me to stick to a low carb diet, I had to find a low carb BBQ sauce. I tried severa sauces and finally found one that my family could not even tell it was low carb. If you are bbq sauce fan, you have to try G. Hughes SmokeHouse SUGAR-FREE BBQ Sauce. It has 1 carb in a tablespoon but you only need a small amount to add some flavor. In this low carb Keto BBQ Cheeseburger Zucchini Boats, you need one cup of BBQ sauce. There is 16 tablespoons in a cup. This recipe serves 6 servings. If you divide six into 16, you get 2.6 carbs per serving for the bbq sauce. If you check carbs in bbq sauces, it will be hard to beat G. Hughes BBQ Sauce. It will be extremely difficult to beat its taste.

I am Southerner to the bone and so are my kids. We cannot live without our BBQ, BBQ sauce, and or a fabulous BBQ Cheeseburger. When ordering a cheeseburger, you can pretty much count on my burger having barbecue sauce on it. I like it slathered on from edge to edge on my bun. How Did I Come Up With Making These Low Carb Keto
BBQ CHEESEBURGER Zucchini Boats?

When my boys were teenagers, they were constantly asking for a BBQ Bacon Cheeseburger? One day, I decided to ground and brown my beef and make a BBQ Bacon Cheeseburger Skillet. I knew it would be so much faster than cooking burgers. Therefore, that is what I did and the rest is history. I have been a lot of recipes using the original combination of ingredients I made almost ten years ago. Some of our favorite recipes made with the “BBQ Cheeseburger Skillet” include BBQ BACON CHEESEBURGER SANDWICH,BBQ BACON CHEESEBURGER SLIDERS,BBQ CHEESEBURGER CORNBREAD SKILLET, plus these delicious BBQ BACON CHEESEBURGER GRILLED CHEESE.

fIRST sTEP: cOOK AND CRUMBLE BACON

If you have not discovered how easy it is to cook bacon in your oven, please read my Oven Fried Bacon post. You can be cooking the bacon in the oven with no mess while you are browning the ground beef on the stove top.

SECOND STEP TO BBQ Cheeseburger zucchini boats: Brown Ground Beef

  • In a medium hot skillet, cook the ground beef until thoroughly done and brown.
  • While the ground beef is browning, add the chopped onion.

THIRD STEP: Prepare zucchini boats

  • Wash and cut the ends off the Zucchini.
  • Slice the Zucchini in half horizontally and scoop out the center and seeds with a small spoon.
  • Add the Zucchini to the baking dish that has been sprayed with a cooking spray.
  • Yes, I doubled this recipe.

  • After adding the Zucchini to the baking dishes, fill each one with the BBQ Cheeseburger filling.

FOURTH STEP: CHEESE

Top the filling on each zucchini with cheese cheese.

fIFTH STEP:  Bake Zucchini Boats Covered With Foil

  • With the baking dishes covered with foil, bake for 40 minutes.  This will depend on how thick your zucchini are.  Remove the foil and check for a tender zucchini after 30 minutes.
  • If you are in a hurry, precook your zucchini in the microwave until fork tender before stuffing them with Italian meat filling.
  • Before removing the zucchini from the oven, stick a fork in them.  The fork should go easily into each zucchini boat.

KETO BBQ CHEESEBURGER ZUCCHINI

Ingredients

  • 2 pounds ground beef
  • One onion chopped small
  • 1 teaspoon pepper
  • 1 cup BBQ sauce
  • Six pieces bacon cooked hard and crumbled
  • 2 cups cheddar cheese shredded
  • 3 large zucchini

    Love, love, love zucchini. My dad used to grow it in our family garden when I was a kid. So we tried many a recipe with it back in the day. But never had it cheeseburger style.
