Butterfly The Chicken Breast

This Keto Pizza Chicken Breast cooks quickly because the chicken breast is butterflied before cooking. As a result, instead of having a thick piece of chicken, you have thinner pieces which cook faster. As another result, you have a larger surface area add your toppings.

What is in this Keto Pizza Chicken Breast recipe?

This Chicken Breast is full of flavors with a low carb flavorful Tomato Basil Sauce made by Rao’s. Rao’s has four carbohydrates per 1/2 cup. You only need a couple of tablespoons of sauce per chicken breast.

Besides the sauce, I added bacon, pepperoni, Mozzarella cheese, and Parmesan cheese.

First Step: Butterfly and Bake Chicken Breast

  • Slice each chicken breast horizontal, butterfly style. Do not slice all the way through the chicken breast.
  • After that, season the chicken with Italian seasoning. My favorite and most flavorful Italian seasoning is Paul Prudhomme’s Pizza Pasta Magic. It has no carbs. Pizza Pasta Magic includes garlic, onions, Parmesan, and crushed red pepper. If you use regular Italian seasoning, you will want to add the other ingredients.
  • Bake 375 degrees for about 15 minutes until it reaches 160 degrees. It will continue to cook after adding the toppings.
  • Do Not turn your oven off.

Second Step: Add Toppings

  • Add two tablespoons of your favorite low carb red sauce. I use a low carb flavorful Tomato Basil Sauce made by Rao’s. Rao’s has four carbohydrates per 1/2 cup.
  • After that, layer on the pepperonis, Mozzarella cheese or a pre-shredded pizza blend, plus a couple of pieces of bacon.
  • Sprinkle with parmesan cheese.
  • Bake until cheese is melted about 10 minutes.

Ingredients

  • 5 chicken breast
  • 2 tablespoons Paul Prohndomme’s Pizza Pasta Magic see note
  • 5 tablespoons Spaghetti Sauce 2 TB per chicken breast
  • 10 slices Mozzarella cheese
  • 5 slices bacon
  • 15 Pepperoni
  • 1/4 cup Parmesan cheese

Instructions
