LEMON PUDDING CAKE

If you love lemon, this easy Lemon Pudding Cake is for you.  The warm lemon pudding with the lemon cake is fantastic and easy to make using a cake mix.

This Lemon Pudding Cake is magical.  The cake mix bakes on the bottom with the pudding on top but after it bakes the cake is on top.

Because it is better served warm, it reminds me of a cobber.  Instead of Lemon Pudding Cake, maybe I should have called it Lemon Cobbler cake.  Whatever you call it, it is delicious.

This cake could not be any easier to make.  It can be made with just about any flavor cake mix/pudding combination you can think of.   Lemon is my favorite!

What ingredients do you need for this easy lemon cake recipe?

To make this easy luscious lemon pudding cake, you will need a lemon cake mix, two 3.4 ounces boxes instant lemon pudding mix, sugar, cold milk, and water.  That is it!  Super simple right!

First Step:  Cake Mix

After you preheat the oven 350 degrees, make the cake mix according to the package directions.  Place the cake mix in the bottom of a 9×13 baking dish that has been sprayed with a cooking spray.

Second Step:  Pudding Mix

In a separate bowl, combine both boxes of pudding mix with sugar, milk, and water.  Whisk for two minutes until it begins to thicken.  Spoon pudding mixture over cake mix batter.  It covers the cake better if you gently spoon it over the cake.

Third Step:  Bake The Cake

Bake the cake for 55 minutes to one hour.  Insert a toothpick in the middle of the pudding cake.  If you get pudding on the toothpick only and no cake mix batter, the pudding cake is done.  The cake will slightly giggle because it does have pudding in it.

Fourth Step:  Maybe the Hardest

Allow the pudding cake to cool about 10 minutes.  This will allow the pudding to thicken up.  It is best served warm.

If you love lemon, this easy Lemon Pudding Cake is for you.  The warm lemon pudding with the lemon cake is fantastic and easy to make using a cake mix.


Ingredients

  • 1 box lemon cake mix, ingredients on the back of the box
  • 2 (3.4 ounces) boxes instant lemon pudding
  • 1/2 cup sugar
  • 2 cups cold milk
  • 1-1/4 cup water

Instructions

  • Preheat the oven 350 degrees.
  • Spray 9 x 13 baking pan with cooking spray.
  • Mix up and bake the box of lemon cake mix according to the package.
  • In a separate bowl, combine both boxes of pudding mix with sugar, milk, and water.
  • Whisk for two minutes until it begins to thicken.
  • Spoon pudding mixture over cake mix batter.  It covers the cake better if you gently spoon it over the cake.
  • Bake for 55 minutes to one hour.
  • Insert a toothpick in the middle of the pudding cake.  If you get pudding on the toothpick only and no cake mix, the pudding cake is done.
  • The cake will slightly giggle because it does have pudding in it.
  • Allow the pudding cake to cool about 15 minutes.  This will allow the pudding to thicken up.
  • It is best served warm.
