This Lemon Blueberry cake mix cake is not only easy to make but full of fantastic flavor from the lemon and blueberries.   This cake is the perfect Show Stopping Center Piece Dessert made with little effort.   You know the dessert I am talking about.  The one that grabs your eye from across the room and screams you got to have a piece.

  

Ingredients for This

To make this Cake, you will need an 18-ounce box Lemon Cake Mix, eggs, vegetable oil, 3.4-ounce box lemon instant pudding, fresh lemon juice, zest of and lemons, and two pints blueberries for the cake.  For the frosting, you will need three 8-ounces cream cheese, sugar, and whipped topping.

If this cake looks familiar, you made have voted for it last summer.   My lemon blueberry cake made it to the top 10 in Recipe Lion’s recipe contest.  I had two recipes in their top ten recipe contest.  My votes were split between my Cake and my Blueberry Watermelon Salad.  You can see this easy Watermelon Salad recipe in an earlier post.

First Step: Cake Mix

  • Using an electric mixer combine cake mix, water, eggs, oil, dry lemon instant pudding mix, fresh lemon juice.
  • Layer in 3 – cake round pans.
  • Bake 350 degrees F for 30 minutes or until a toothpick comes out clean when inserted in the center of the cake.  Do not overbake. All ovens are different.
  • Remove cake from the oven and completely cool it.

Second Step:  Make Frosting

  • Use an electric mixer and whip up cream cheese and sugar.
  • Add the whipped topping and combine it well.

Third Step:  Assemble The Cake

  • Flip one cake over on top of a plate.
  • Add 1/3 of the frosting.
  • Layer 1/3 of blueberries.
  • And the Zest of one whole lemon on top of the frosting and blueberries.  This cake must include the lemon zest!
  • Repeat layering with cake, frosting, blueberries, and lemon zest in all three layers.
