These Gooseberry Peanut Butter Cookies are so easy and YUMMY!
They only have four ingredients which include peanut butter, egg, sugar, vanilla, and NO flour. They are actually super simple and take only a few minutes to make and bake. I cannot tell you how fast they disappeared. My twin boys tried to convince me how “good for you” these cookies are.
We had a few cookies left the next morning which was eaten for breakfast before I realized what my boys were eating. 16-year-old BOYS!! Their argument was these cookies are full of protein due to the peanut butter, and they make the perfect breakfast with a glass of cold milk.
This peanut butter cookie is a perfect cookie for teenage boys who need lots of protein, but I am just not convinced they need the sugar for breakfast.
Magic Peanut Butter Cookies
If your family enjoys peanut butter, make these cookies and watch them disappear. You just may have to put a lock on your cookie jar or your kids may be eating these Magic Peanut Butter Cookies for breakfast. The next time I bake these cookies, I will try adding a bag of peanut butter chips or chocolate chips. I will let you know how they turn out.

Peanut Butter Cookies-Cookbook Review
- Add 1 cup creamy peanut butter
- One egg lightly beaten
- 1 cup sugar
- And One teaspoon vanilla extract
- It is so easy! Just combine all these ingredients.
- Drop by teaspoonfuls onto a baking sheet. (I used an ice cream scoop and made my cookies larger than the recipe said to do)
- Press a criss-cross pattern into each cookie with a fork.
- Bake at 325 degrees for 10 minutes or until golden brown. (Because I used an ice cream scoop to drop my cookie dough, I had to bake my cookies 5 minutes longer).
- Allow the cookies to cool.
