MEXICAN CRESCENT ROLL CASSEROLE

This easy Mexican Crescent Roll Casserole only includes six ingredients.  You can put it together in minutes.

Do you need an easy meal you can prep and bake in 30 minutes?  This Mexican Crescent Roll Casserole is not only quick and easy but tasty.  It is perfect for a weeknight meal.

My son, Casey, who is now in medical school studying to be an M.D. reminded me last week about this casserole.  He was preparing it for his roommates.  It is so easy to make, and he had eaten it many times growing up that Casey had remembered how to make it.  After researching the 561 recipes on my blog, Yes, I have that many recipes I have written about over the past seven years, I did not find a recipe for this Mexican Crescent Roll Casserole.  So, now I do.  When my kids were teenagers, it was a go-to recipe.  They loved Crescent rolls and Mexican food so one day I put them together and it was a huge hit.

EASY MEXICAN CRESCENT ROLL CASSEROLE - Do you need an easy meal you can prep and bake in 30 minutes?  This Mexican Crescent Roll Casserole is not only quick and easy but tasty.  It is perfect for a weeknight meal. What is in this Mexican Crescent Roll Casserole? You only need six ingredients plus toppings including 2 pounds ground beef, 2 cans Crescent Rolls, 15 ounces can black beans, 15 ounces can corn, 2 cups shredded Mexican cheese, and two tablespoons Taco seasoning.

First Step:  Brown Ground Beef

After you brown two pounds of ground beef, add two tablespoons of your favorite Mexican seasoning.

Second Step:  Crescent Rolls

Spray a 9 x 13 casserole dish with a cooking spray.  Unroll a package of crescent rolls and line the bottom and halfway up the sides with crescent dough.

Third Step:  Cooked Ground Beef

Layer the Cooked Ground Beef on top of the Crescent Rolls that have been pressed into the bottom of a casserole dish.

Fourth Step: Corn

Drain and rinse a can of corn.  Put the corn on top of the ground beef.

Fifth Step: Black Beans

Drain and Rinse a can of black beans.  Layer the black beans on top of the corn and ground beef.

Sixth Step:  Shredded Cheese

Add two cups of shredded cheese on top of the black beans and corn.

Seventh Step:  Crescent Roll

Unroll another can of Crescent Rolls and pinch the creases together.   Place the Crescent Rolls on top of everything and sprinkle with two teaspoons of additional Mexican seasoning.

Eight Step:  Bake Mexican Crescent Roll Casserole

Bake casserole in a preheated 375-degree oven for 20 to 25 minutes until golden brown.

This casserole does not have much liquid to keep it from having a soggy bottom.  When serving this Mexican Crescent Casserole, top it with salsa and sour cream.

Ingredients

  • 2 pounds ground beef
  • 2 cans crescent dinner rolls 8 oz each Pillsbury™ refrigerated crescent dinner rolls
  • 1 15 ounces black beans drained
  • 1 15 ounces whole corn drained
  • 2 cups shredded Mexican cheese OR Cheddar cheese
  • 2 tablespoons Taco seasonings
  • shredded lettuce chopped tomatoes, sour cream, taco sauce or salsa, as desired

Instructions

  • Brown two pounds of ground beef
  • Add two tablespoons of your favorite Mexican seasoning.
  • Spray a 9 x 13 casserole dish with a cooking spray.
  • Unroll a package of crescent rolls and line the bottom and halfway up the sides with crescent dough.
  • Layer the Cooked Ground Beef on top of the Crescent Rolls that have been pressed into the bottom of a casserole dish.
  • Drain and rinse a can of corn.  Put the corn on top of the ground beef.
  • Drain and Rinse a can of black beans.  Layer the black beans on top of the corn and ground beef.
  • Add two cups of shredded cheese on top of the black beans and corn.
  • Unroll another can of Crescent Rolls and pinch the creases together.   Place the Crescent Rolls on top of everything and sprinkle with two teaspoons of additional Mexican seasoning.
  • Bake casserole in a preheated 375-degree oven for 20 to 25 minutes until golden brown.
  • Bake 375 degrees for 20 – 25 minutes.   Just long enough to brown the Crescent rolls and melt the cheese.
  • Top with Sour Cream and Salsa, shredded lettuce, chopped tomatoes, taco sauce, and enjoy!

Notes

  • This casserole does not have much liquid to keep it from having a soggy bottom.  When serving this Mexican Crescent Casserole, top it with salsa and sour cream.
  • Top with shredded lettuce, chopped tomatoes, sour cream, taco sauce or salsa, as desired
