Stuffed Chicken Garlic Butter Mushrooms

Calling All Garlic Butter Mushroom Lovers!  This Amazing Garlic Butter Mushrooms STUFFED Chicken is for YOU!

Mushrooms soak up all the garlic, butter, onion, Worcestershire, and Italian seasonings in a creamy sauce.  The chicken breast is cut horizontally, butterflied, and filled with ham and cheese.   It is then sauteed in a skillet which makes it super easy to make.  The stuffed chicken with the creamy garlic butter mushroom sauce is served over a bed of spinach.  The garlicky sauce makes a terrific dressing, if you will, for the spinach.   The combination of everything in this Stuffed Chicken Garlic Butter Mushrooms is insane!

Low Carb

Stuffed Chicken Garlic Butter Mushrooms has only ten carbs per serving. A lot of those carbs are coming from healthy spinach and mushrooms. This dish is worth every carb. It is extremely delicious.

This recipe was inspired by a recipe I made in an earlier post where the chicken was stuffed with prosciutto and Havarti cheese and then grilled.  After it was grilled, I added it to this creamy garlic butter mushroom sauce.  If you love using your grill, check out a similar stuffed grilled chicken recipe here.

If you simply do not have time to saute chicken on the stove, use an oven-safe skillet.

Saute Your Chicken In Oven Safe Skillet

Chicken breasts are better if you can saute them in a skillet.  If you are a super busy mom, save time by sauteing both sides quickly in an oven-safe skillet but not entirely done.  Toss the skillet into the oven to finish cooking.  After the chicken reaches at least 165 degrees F, the chicken will continue to cook when removed from the oven, place a chicken breast over a bed of spinach.  Drizzle the fabulous garlic mushroom sauce over the entire plate.

How To Make Stuffed Chicken Garlic Butter Mushrooms

First Step:  Season & Stuff the Chicken

  • On a baking sheet, slice the chicken breast horizontally.
  • Stuff chicken breast with cheese and prosciutto/ham.
  • Season both sides of the chicken breasts with seasoning salt, garlic, and Italian seasoning.

Second Step:  Cook Chicken Breast

  • Heat a large skillet with four tablespoons of butter.
  • Cook the chicken breast on a hot grill until they reach 165 degrees F.
  • Turn once halfway through the process about 10 minutes on each side.

Third Step:  Mushroom Sauce

  • Melt four tablespoons of butter in a large skillet.
  • Saute the garlic and the onion in the butter.
  • Stir in the chicken broth.
  • Add the juice of one lemon.
  • One Teaspoon Italian Seasoning
  • Add the heavy cream
  • tablespoons Worcestershire
  • Add the sliced mushrooms.
  • Slowly cook the mushrooms until tender.

Fourth Step:  Serve The Chicken and Mushroom Sauce

  • Serve the chicken over a bed of fresh spinach.
  • Top the chicken and spinach with the garlic butter mushroom sauce.
  • YOU DO NOT LIKE RAW SPINACH, no problem!  Add the spinach to the sauce and wilt it in the pan with the mushrooms and garlic.  Fabulous!

  • GRILLED CHICKEN:
  • 6 chicken breast skinless boneless
  • 1 tablespoon seasoning salt
  • 1 tablespoon granulated garlic
  • 1 tablespoon Italian seasoning
  • 6 slices prosciutto
  • 6 slices Havarti cheese
  • MUSHROOM SAUCE:
  • 4 tablespoons butter
  • 2 tablespoons minced garlic
  • 1 small onion finely chopped
  • 1 pound mushrooms sliced
  • 1/4 cup chicken broth
  • juice one lemon
  • 1 cup heavy cream
  • 2 tablespoons Worcestershire

Instructions

  • Slice the chicken breast horizontally, butterfly the chicken.
  • Stuff chicken breast with cheese and prosciutto (ham).
  • Season the chicken breasts with seasoning salt, garlic, and Italian seasoning.
  • Using a couple tablespoons of oil or butter, cook the chicken breast in a hot skillet season side down.
  • Season the top after adding the chicken to the skillet.
  • Turn once halfway through the process about 10 minutes on each side.
  • MUSHROOM SAUCE:
  • Melt four tablespoons of butter in a large skillet.
  • Saute the garlic and the onion in the butter.
  • Stir in the chicken broth.
  • Add the juice of one lemon.
  • One Teaspoon Italian Seasoning Blend
  • Add the heavy cream
  • tablespoons Worcestershire
  • Add the sliced mushrooms.
  • Slowly cook the mushrooms until tender.
