I am a big-time coconut nut.  Trust me; you cannot get much better than this No-Bake Coconut Pie. I’m also into easy recipes, which is what I blog all about the less fuss, the better!  You cannot get much easier than this pie.  I cannot wait for you to see the simple steps below.

What is in this No-Bake Coconut Pie?

It includes a crunchy praline layer made with butter, brown sugar, and pecans, which is brought to a boil and quickly removed from the heat.  The creamy filling consists of two envelopes of Dream Whip Mix, milk, two packs instant vanilla pudding, vanilla, and coconut.  This combination makes the best no-bake coconut pie.

Praline Layer

This praline layer, when added to the bottom of this pie, is soft but crunchy.  Your fork should slide through the praline layer.   The secret to making the praline layer is to bring the ingredients to a boil and quickly remove it from the heat.

I am guilty!  Once I find something easy to do and fabulous, I am guilty of adding it to as many different recipes as possible.   I have used this praline layer before in several of my pies and cakes, including some recipe competitions.  You can see this praline layer in my favorite cheesecake ever, No-Bake Praline Cheesecake.   This combination of praline and coconut is a winner in this no-bake coconut pie.

First Step: Bake Pie Crust

  • Pre-bake a pie crust according to the package.

Second Step: Make Praline Layer

  • Heat pecans, butter, and brown sugar in a small saucepan until the butter and sugar have dissolved, and the mixture begins to boil.
  • Remove from heat once it starts boiling.
  • Pour in the bottom of a pie crust that has been pre-baked.

Third Step: Coconut Cream Layer

  • Beat Dream Whip Topping mix, 1 cup milk, and vanilla in a large bowl with an electric mixer beat on high speed about six minutes until forms peaks.
  • Add remaining 1-3/4 cup milk and pudding mixes and blend on low speed.
  • Stir in one cup of coconut.
  • Spoon into pie shell over the praline mixture.
  • Add the toasted coconut.

Fourth Step: Refrigerate This No-Bake Coconut Pie

  • Refrigerate at least four hours.

Serve Pie:

  • When serving pie, whip up the resulting mixture for the topping:
  • One cup whipped heavy cream, two tablespoon Sugar, and one teaspoon coconut.

Ingredients

  • 1 Deep Dish Pie Shell baked
  • 1/2 cup pecans
  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 2 envelops Dream Whip Mix
  • 2  - 3/4 cups milk
  • 1 - teaspoon Vanilla Extract
  • 2 packs Instant Vanilla or Coconut Pudding
  • 1 - 1/3 cups coconut

Instructions

  • Pre-bake a pie crust according to the package.
  • Toast 1/3 cup coconut to decorate the top of the pie.  Toast in the oven with the pie crust.  Stir every ten minutes.  Remove from the oven when it reaches a tan color.
  • Heat pecans, butter, and brown sugar in a small saucepan until the butter and sugar have dissolved, and mixture begins to boil.
  • Remove from heat once it starts boiling.
  • Pour in the bottom of a deep-dish pie crust that has been pre-baked.
  • Beat Dream Whip Topping mix, 1 cup milk, and vanilla in a large bowl with an electric mixer beat on high speed about six minutes until forms peaks.
  • Add remaining 1-3/4 cup milk and pudding mixes and blend on low speed.
  • Stir in one cup of coconut.
  • Spoon into pie shell over the praline mixture.
  • Refrigerate at least four hours.
  • When serving top with the following:
  • 1 cup whipped heavy cream, two tablespoon Sugar, and one teaspoon coconut.
