PIZZA CHICKEN BREAST

All the flavors of pizza, without the work or the carbs.  Your entire family will love this easy to make Pizza Chicken Breast.

This pizza chicken breast not only tastes terrific but you can whip it up in 30 minutes.  It is one of my easy to go chicken breast recipes that I could not live without.   This pizza version includes all of our favorite pizza toppings including pizza sauce, cheese, pepperoni, and bacon.

Use Your Skillet or Oven To Make This Pizza Chicken Breast

Because my special needs son, Caleb, was helping me make this pizza chicken breast, we used the oven.  This Chicken can easily be made in a skillet on the stove.  To make this oven Pizza Chicken Breast, we simply seasoned the chicken breast with salt, pepper, garlic, and Italian seasoning. Next, we baked it about 25 minutes until 165 degrees F.   The timing will depend on the thickness of your chicken breast.  Once the chicken reaches 165 degrees F., remove the chicken from the oven and layer it with pizza sauce, pepperoni, cheese, and cooked sliced bacon.  Place it back into the oven for 5 to 10 minutes until the cheese is gooey.

CHICKEN BREAST TIPS

Boneless chicken breasts are low in fat and high in protein. As a result, they are the most popular part of a chicken. Even though chicken breast are eaten all the time, they can be surprisingly difficult to cook. Chicken breasts are not evenly shaped which leads to cooking them slightly undercooked or overcooked.

To cook my chicken breast quicker and more evenly, I often place the chicken between two pieces of plastic wrap and pound the thicker areas down to the same size. Another great way is to butterfly the chicken breast before cooking. See full instructions here. Having the same size chicken breast before cooking it in a skillet on the stove is very helpful for getting everything done at the same time.

When cooking chicken breast in an oven, I do not butterfly nor pound the chicken breast down. It is a much simpler process. As a result, cooking chicken in the oven is easy enough for my special needs son to do with little help from me.

To Make Oven Baked Pizza Chicken Breast

First Step: Oven Baked Pizza Chicken Breast

Preheat the oven to 375 degrees.

Second Step: Prepare The Chicken

  • Begin the cooking process by trimming the fat.  Place the chicken on a cutting board. Trim the fat and look for any bones that were left on the chicken.
  • After you have finished trimming the chicken breasts, dry them with a disposable paper towel.
  • Season the chicken well with Italian seasoning. My favorite and most flavorful Italian seasoning is Paul Prudhomme’s Pizza Pasta Magic.  Pizza Pasta Magic includes garlic, onions, Parmesan, and crushed red pepper. However, if you use regular Italian seasoning, you will want to add the other ingredients.

Third Step: Bake The Chicken Breast

  • Bake 375 degrees for about 20 minutes until it reaches 160 degrees. Again, the baking time will depend on the thickness of your chicken. So, use a meat thermometer for best results. Your chicken will continue to cook after adding the toppings and placing it back into the oven.
  • DO NOT turn your oven off.

Fourth Step: Add The Pizza Toppings

  • Remove chicken from the oven. 
  • Next, add two tablespoons of your favorite red sauce.
  • After that, layer on the pepperonis, Mozzarella cheese or a pre-shredded pizza blend, plus a couple of pieces of bacon.
  • Sprinkle with parmesan cheese.
  • Lastly, bake the pizza chicken breast until the cheese is melted about 10 minutes and the chicken reaches 165 degrees.

To Make Skillet Pizza Chicken Breast

First Step: Skillet Pizza Chicken Breast

  • The first step to cooking chicken breasts is to trim the fat.  Place the chicken on a cutting board. Trim the fat and look for any bones that were left on the chicken.
  • After you have finished trimming the chicken breasts, dry them with a disposable paper towel.
  • Season the chicken well Italian seasoning.

Secondly, Heat Up The Skillet

  • Heat a large frying pan or cast-iron skillet on medium heat. Add a tablespoon of butter and a tablespoon of oil per chicken breast. Next, move it around to dissolve the butter.

Thirdly, Add The Chicken Breast To The Skillet

  • Add the chicken breast once the butter has melted and the oil shimmers.
  • Don’t touch the chicken breasts for at least 3-5 minutes or until it forms a golden crust. The longer you leave it on each side. Once the chicken creates a golden-brown crust, it will not stick to the skillet and it is ready to flip.
  • Flip the chicken using the spatula or tongs.
  • If the chicken sticks to the pan, it’s not ready to be flipped yet. Wait about one more minute, and then it should release.
  • Continue cooking the second side for about five minutes.

Fourth Step: Use Meat Thermometer

  • Indeed, use your meat thermometer. Check the thickest part of the breasts with the meat thermometer. When the temperature reaches 160 degrees Fahrenheit the chicken is ready for the toppings.

Fifth Step: Add The Pizza Toppings

  • Next, add the pizza topping. Layer on two tablespoons of your favorite red sauce.
    After that, layer on the pepperonis, Mozzarella cheese or a pre-shredded pizza blend, plus a couple of pieces of bacon.
    Sprinkle with parmesan cheese.
  • Next, place a lid on the skillet and allow the cheese to melt.
  • Remove the skillet from the heat when it reaches 165 degrees Fahrenheit.
