First Step:  Make the Crust:

Using a mini food processor, combine the graham crackers, butter, and sugar until crumbs start to stick together.

Second Step:  Springform Pan

Spray the bottom of a 6 or 7-inch springform pan and press the graham cracker mixture into the bottom and sides of the springform pan.

Third Step:  Make the Cheesecake Batter

Using an electric mixer, combine the cream cheese, sugar, eggs, heavy cream, and vanilla until creamy.  Next, pour half of the mixture into the springform pan.  Before adding the rest of the cheesecake batter, add the Rolos.  Finally, cover the Rolos with the rest of the cheesecake mixture.

Fourth Step:  Foil Handles

To lower and raise the springform pan into the pressure cooker, make handles using foil.

  • Cut two pieces of heavy-duty foil 8 inches wide by 20 inches in length.  This will fit nicely crisscrossed under the springform pan.
  • Fold each piece of foil in half so that it is 4 inches wide.
  • In the bottom of the pressure cooker, add a rack or at least three foil balls or even a snack using foil.  This will raise the springform pan up off the bottom of the pressure cooker.

Fifth Step: Cook the Pressure Cooker Turtle Cheesecake

  • Set Pressure Cooker to high and cook for 30 minutes.  Allow Pressure to release naturally.
  • Finally, place the cheesecake in the refrigerator overnight or at least 4 hours.

Serve Each Piece of Pressure Cooker Turtle Cheesecake

  • Serve each piece of cheesecake topped with fudge sauce, salted caramel ice cream sauce, whipped cream, and chopped pecans.
