HONEY MUSTARD CHICKEN BREAST

Whip up this Skillet Honey Mustard Chicken breast is less than 30 minutes using heavy cream, honey mustard, bacon, garlic, thyme, salt, and pepper. The flavors are fantastic!

For convenience, use your favorite store-bought honey mustard. I prepared this Honey Mustard Chicken with a low carb Honey Mustard but it would be fabulous with regular honey mustard too. My favorite is Sweet Baby Ray’s Honey Mustard which my local Walmart carries.

Low Carb Skillet Honey Mustard Chicken Breast

When trying to eat low carb, I created this mustard chicken breast. I found G Huges Sugar-Free Honey Mustard and wanted to prepare an easy low carb recipe. Trust me! You would never know it is sugar-free. My family had no idea it was sugar-free honey mustard. Yes, any honey mustard should work fine. If you want to make your own honey mustard, here is my favorite. It is sweet with a little heat honey mustard.

To add lots of flavors, the chicken breast is cooked in the bacon grease. After frying the bacon, garlic, thyme, salt, and pepper are added. The thyme and honey mustard are the perfect flavorful combination.

Skillet Honey mustard Chicken Breast

To speed up the cooking process, cook the chicken evenly, and to serve a smaller portion, the chicken breast to be similar in size. For this recipe, I cut my chicken breast horizontally but you can also pound your chicken breast. Both ways result in a thinner piece of meat, which allows faster and even cooking times. See my tips below for using both methods.

First Tip: Cut Your Chicken Horizontally

Trim the chicken – Trim any membranes or fat from the breasts with a knife or kitchen shears.

Most moms are super busy with kids.  If this is you and you want to make this recipe but do not have time to watch the skillet, cut your chicken breast in half horizontally. The chicken will cook much faster plus it is great for portion control.  Some chicken breast can be enormous.  By slicing the chicken breast in half lengthwise, the chicken is much thinner and cooks quickly. TIP: It is easier to cut the chicken when it is partially frozen.

Second Tip: Pound Chicken Breast

If you do not want to cut your chicken breast in half, you can pound all your chicken breast to the same thickness.   Trust me, beating your chicken is a lot of fun.  Beating your meat is a great way to get your daily frustrations out.  When the chicken breasts are all the same thickness, it keeps the chicken from being underdone or overdone.

Instructions For Pounding Chicken Breast

  1. Trim the chicken.  Trim any membranes or fat from the breasts with a knife or kitchen shears.
  2. Place the chicken in a bag.  Working with one chicken breast at a time, place inside a gallon zip-top bag and seal the bag, pressing out as much air as possible.
  3. OR Place the Chicken between to pieces of plastic wrap.  You could also place the chicken breast between two pieces of plastic wrap and then pound it out.
  4. Beat the chicken thin.  Pound with the flat side of a meat mallet, cast iron skillet, or rolling pin to an even 1/4-inch thickness.

  • Fry bacon and remove it from skillet. Chop into small pieces.
    Saute the garlic in the bacon grease until fragrant. Be careful not to burn the garlic.
    Trim and season the chicken breast well with salt, pepper, and garlic.
    Saute the chicken breast on each side for 3 to 4 minutes. Chicken should be 150 degrees F. before adding the other ingredients.
    Add the honey mustard and heavy cream to the skillet and bring to a simmer for 2 minutes while stirring.
    Add the thawed broccoli and thyme and place a lid on the skillet. Cook for 5 minutes or until tender.
    Using a meat thermometer, test the chicken to make sure it reads 170 degrees F.
    Stir in the chopped bacon and reduce the heat to low.
