Cajun Potato Salad

I made this potato salad for over twenty years but stopped making it about ten years ago. Why do you ask? It is not because this Southern potato salad is not delicious, but I live in Mandeville, Louisiana, where I fell in love with Cajun potato salad. I Cajuns used their leftover potatoes to make Cajun Potato salad after having a crawfish, crab, or shrimp boil. The potatoes were well seasoned with crab boil seasonings before making the potato salad. So, from that moment of discovery to now when cooking potato salad, I boil my potatoes in crab boil.
My Cajun Potato Salad is the number one post on my blog during the summer. What is the difference between my Southern Potato Salad and my Cajun Potato Salad? I boil my potatoes in the crab boil instead of water and add some found out boiled shrimp. Cajun potato salad pictured below.

Family Gathering

I had a lot of family in town this past June for my son’s wedding. During that time, I had family from both my husband’s and my family over for a meal. Cajun potato salad was on the menu, but I have a family who did not like spicy food and even a couple who did not eat seafood. So, I also whipped up this classic Southern Potato Salad. Because I had so many non-spicy food lovers and non-seafood lovers, this potato salad was a hit. I had not made this Southern Potato Salad is years and had never blogged about it. When several family members asked me for the recipe, I decided it was time to write about it.

Step One: Oven-Fried Bacon

A good Southern Potato salad has to include bacon. The easiest way to prepare bacon is in the oven. If you have never cooked bacon in your oven, see full instructions for Oven-Fried Bacon here. Cook the bacon hard so it will easily crumble.

Second Step: Potatoes

Wash and clean the bad spots off your new potatoes. Cut them in bite-size pieces. Typically, I cut the potato in half and then in half again. Cook the potatoes in salty water until tender. If a fork slides into the potatoes easily, they are done. Remove the potatoes from the stove and drain the water.

What is the best potato to use for potato salad?

The potatoes you use for your potato salad will make a difference in the texture of your salad.  Potatoes that hold their shape when cooked like Yukon Gold or red potatoes are best when making potato salad.  They will keep their firm texture and will not be destroyed when tossing them with the dressing.

Do you cut red potatoes before boiling?

You do not have to peel red potatoes before boiling them.  The skin adds flavor and nutrients.

Is it better to boil potatoes whole or cut them up?

Your potatoes will cook quicker when you cut them into chunks before boiling them.  You can leave the potatoes whole, but it will take much longer to cook them.  If you are using a potato that can become mushy during the cooking process, you might want to cook them whole.

Do you boil water before adding the potatoes?

Add your potatoes to the water before it starts boiling.  Adding your potatoes to the water after the water is boiling will cause the outside of the potatoes to cook faster than the inside of the potatoes.  By the time they are fork-tender or fully cooked, the outside will be mushy.

How long should you boil potatoes?

Use a large pot and cover with cold water about two inches above the potatoes.  Add your crab boil, and bring the potatoes to a boil over medium heat.  Cook the potatoes until tender, about 15 minutes.  Drain the potatoes after you can easily slide a fork in them.

Third Step:

Combine the potatoes, chopped celery, sliced eggs, and crumbled bacon. You can combine them in the same pot you used to cook the potatoes.

Fourth Step: Dressing for Southern Potato Salad

  • In a separate bowl, combine the mayo, creole mustard, Worcestershire, Tony Chachere’s Creole Seasoning, pepper, and garlic powder and mix well.
  • Mix the dressing well with the potato, shrimp, celery, eggs, and bacon.
  • Refrigerate
