STUFFED CHICKEN BREAST MUSHROOM SAUCE

This stuffed chicken breast is special enough for any occasion but easy enough for anytime.

Usually, I prepare this mushroom sauce to go on top of steaks.  The flavors are fantastic with the garlic, lemon juice, Worcestershire,  and basil.  The mushrooms are like sponges and soak up all the flavors of the sauce.  My husband wanted to grill chicken last weekend.  I decided instead of adding barbecue sauce I would leave it off and stuff the chicken with Prosciutto and Cheese after grilling it.

What makes this chicken special?

I used Havarti cheese because it is smoked, very creamy, and melts well.  After stuffing the chicken, I added it to the skillet full of the mushroom sauce.  I basted the chicken and then placed the lid on it.  The steam inside the skillet melted the cheese and warmed the Prosciutto.  It was Outstanding!  The garlic mushroom sauce was fantastic over the chicken.   You will want to make sure you fix some bread, as we say in the south, to sop up every bit of the creamy mushroom gravy.

First Step:  Stuff Chicken

  1. On a baking sheet, slice the chicken breast horizontally.
  2. Stuff chicken breast with cheese and prosciutto (ham).
  3. Season the chicken breast with seasoning salt, garlic, and Italian seasoning.
  4. Refrigerate at least 30 minutes.

Second Step:  Grill Chicken

  1. Cook the chicken breast on a hot grill until they reach 165 degrees F.
  2. Turn once halfway through the process about 10 minutes on each side.

Second Step:  MUSHROOM SAUCE

  • Melt four tablespoons of butter in a large skillet.
  • Saute the garlic and the onion in the butter.
  • Stir in the chicken broth.
  • Add the juice of one lemon.
  • Add the heavy cream.
  • Tablespoons Worcestershire.
  • One Teaspoon Italian Seasoning.  I use Paul Prudhommes’s Pizza Pasta Magic.
  • Add the sliced mushrooms.
  • Slowly cook the mushrooms until tender.

Third Step:

Add the chicken to the mushroom sauce or serve the mushroom sauce over the chicken.

Ingredients

  • GRILLED CHICKEN:
  • Six boneless skinless chicken breast
  • And One tablespoon seasoning salt
  • One tablespoon granulated garlic
  • One tablespoon Italian seasoning
  • Six slices prosciutto
  • Six slices Havarti cheese
  • MUSHROOM SAUCE:
  • Four tablespoons butter divided four tablespoons each
  • Two tablespoons minced garlic
  • 1/2 small onion finely chopped
  • 1 pound of sliced mushrooms
  • 1/4 cup chicken broth
  • juice of one lemon
  • 1 cup heavy cream
  • Two tablespoon Worcestershire

Instructions

  • On a baking sheet, slice the chicken breast horizontally.
  • Stuff chicken breast with cheese and prosciutto (ham).
  • Season both side of the chicken breasts with seasoning salt, garlic, and Italian seasoning.
  • Refrigerate at least 30 minutes.
  • Cook the chicken breast on a hot grill until they reach 170 degrees F.
  • Turn once halfway through the process about 10 minutes on each side.
  • MUSHROOM SAUCE:
  • Melt four tablespoons of butter in a large skillet.
  • Saute the garlic and the onion in the butter.
  • Stir in the chicken broth.
  • Add the juice of one lemon.
  • One Teaspoon Italian Seasoning
  • Add the heavy cream
  • tablespoons Worcestershire
  • Leave in the skillet and add the other four tablespoons of butter.
  • Add the sliced mushrooms.
  • Slowly cook the mushrooms until tender.
