TEX MEX CHICKEN BREAST & BLACK BEANS

I love easy recipes that I can toss together in 30 minutes or less.  This Tex-Mex Chicken Breast & Black Beans is truly easy and delicious.

Life at my house can get hectic and stressful.  I need easy recipes most days if I am going to put any dinner on the table.  That is why I add so many Crock-Pot/Slow Cooker recipes to my blog.   This Tex Mex Chicken Breast & Black Beans is not a Crock-Pot recipe, but it is easy and full of flavor.  If you need easy recipes, try to prepare chicken breasts.  You can slice the chicken breasts in half lengthwise, and it will cook even faster.  It will also be closer to a four-ounce portion.  Last week, I added a Barbecue Bacon Spinach Chicken Breast recipe to my blog.  I season this Tex Mex Chicken Breast with Paul Prudhomme’s Fajita Magic.  I served it on top of some black beans seasoned with chili powder and cumin.  Then, I topped everything with a mixture of sour cream and salsa which is the pink stuff.  This Tex Mex Chicken Breast has lots of flavors and is super easy to make.

Easy Tex-Mex Chicken Breast & Black Beans

Ingredients

  • chicken breast I used 4 for my family and cut them in half length wise
  • Mexican Tex-Mex or Taco seasoning, about 1 teaspoon per chicken breast
  • 1 to 2 pieces of sliced cheese per chicken breast. Cheddar, Colby, or Monterey Jack
  • SAUCE:
  • equal mixture of sour cream and salsa
  • 1/2 cup sour cream & 1/2 cup salsa per 4 chicken breast
  • BLACK BEAN INGREDIENTS:
  • 2 - 15 ounce cans black beans drained one can
  • 1 can whole kernel corn drained
  • 1 tablespoon Chili powder
  • 1 tablespoon Cumin
  • 1 teaspoon Oregano
  • 1 small onion diced

Instructions

  • Season chicken breast well with Mexican or Tex Mex seasoning
  • Bake the chicken breast at 350 degrees for 25 minutes
  • Add 1 to 2 pieces of cheese to top of each chicken breast and return to the oven for 5 minutes.
  • Combine the black beans, corn, and seasoning.
  • Heat well.
  • Combine the salsa and sour cream.
  • Add black beans to the center of each plate.
  • Top with a chicken breast.
  • Add the sauce on top of each breast. See picture.

      Sometimes, I just need a very quick meal. To me, it is so easy to bake chicken breast. At times, I have even baked them frozen. I love my food seasoned well which is why I enjoy Tex-Mex food so much.
