HOW TO MAKE MOISTEST FRESH APPLE CAKE

Equipment

  • 10-inch bundt cake pan

Ingredients

  • 3 cups all-purpose flour sifted
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • cups vegetable oil
  • 2 cups sugar
  • Three large eggs room temperature
  • Two teaspoons vanilla
  • cups pecans chopped
  • 4 cups apples peeled and finely chopped (original recipe called for 2 cups)
  • ½ teaspoon nutmeg
  • 2 teaspoons cinnamon
  • BROWN SUGAR TOPPING
  • 1/2 cup butter
  • 1/2 cup light brown sugar packed
  • 2 teaspoons milk

Instructions

  • Preheat the oven 325 degrees.
  • Sift the flour, soda, nutmeg, cinnamon, salt and set aside.
  • Beat together the oil, sugar, eggs and vanilla.
  • With the mixer on low, gradually add flour mixture and beat until mixed.
  • Stir in the chopped apples and pecans. I used a mini food processor for the apples.
  • Bake 325 degrees for 1 hour 20 minutes.
  • BROWN SUGAR TOPPIN:
  • Combine all ingredients and bring to a boil over medium heat.
  • Cook two minutes, stirring constantly.
  • Spoon over warm cake.

Notes

The cake is fabulous plain but it is extremely delicious served with ice cream, whipped cream, or even custard. For a beautiful plating, sprinkle cinnamon and add fresh mint leaf. 
Fresh Apple Cake can be served warm or cold. 
Store cake covered for a day or two.  To keep longer, refriegerate and bring to room temperature before serving.
