PIZZA CHICKEN BREAST

This pizza chicken breast not only tastes terrific but you can whip it up in 30 minutes.  It is one of my easy to go chicken breast recipes that I could not live without.   This pizza version includes all of our favorite pizza toppings including pizza sauce, cheese, pepperoni, and bacon.

  • Begin the cooking process by trimming the fat.  Place the chicken on a cutting board. Trim the fat and look for any bones that were left on the chicken. After you have finished trimming the chicken breasts, dry them with a disposable paper towel.
    Next, season the chicken well with Italian seasoning. My favorite and most flavorful Italian seasoning is Paul Prudhomme’s Pizza Pasta Magic.  Pizza Pasta Magic includes garlic, onions, Parmesan, and crushed red pepper. If you use regular Italian seasoning, you will want to add the other ingredients.
    Bake 375 degrees for about 20 minutes until it reaches 160 degrees. Again, the baking time will depend on the thickness of your chicken. So, use a meat thermometer for best results. Your chicken will continue to cook after adding the toppings and placing it back into the oven. DO NOT turn your oven off.
    Lastly, remove chicken from the oven. Add two tablespoons of your favorite red sauce. After that, layer on the pepperonis, Mozzarella cheese or a pre-shredded pizza blend, plus a couple of pieces of bacon. Sprinkle with Parmesan cheese. Above all, bake until cheese is melted about 10 minutes and the chicken reaches 165 degrees.

Notes
