Red, White, and Blue Treats

Easy to make Red, White, and Blue Watermelon Cake plus Red White and Blue chocolate covered strawberries.

Equipment

Ingredients

  • 1 watermelon
  • 16 ounces frozen whipped topping
  • 1 pound strawberries
  • 16 ounces white chocolate or dark chocolate
  • 1 tablespoon shortening

  • 4 ounce candy melts red, blue

Instructions

  • TO MAKE WATERMELON CAKE
    Cut both ends off the watermelon.
    Next, Remove the rind from the middle section.
    Take a long knife and cut around the watermelon as close as you can to the rind.
    You can cut the watermelon "cake" in as many layers as you want.
    I have made this cake a couple of times and make three layers each time.
    Pat the watermelon dry with paper towels. This will help the whipped topping stick to the cake. Cover the entire cake with Frozen Whipped Topping.
    CHOCOLATE COVERED STRAWBERRIES

    One option is to slowly melt the chocolate in the microwave. Try melting for one minute and stirring it. If needed add a few extra seconds on the timer.
    Again, chocolate is easy to overcook. Take your time and melt it slowly. Try 10 to 15 seconds in the microwave at a time.
    Before you begin melting the chocolate fill a slow cooker one-fourth way full of hot water. Leave the slow cooker on high. Place the chocolate over the slow cooker once the chocolate has melted. This method will keep the chocolate from getting too thick.

    Double Broiler Method
    Using a Double Broiler is a great way to melt the chocolate slowly. If you can turn the temperature to warm the chocolate will stay warm enough so that it will not thicken up. Be super careful not to get moisture in the chocolate. Use a big enough bowl over the boiling water so that moisture does not get in the chocolate. Water and chocolate do not mix.

    Ghirardelli Melting Wafers
    If you have to use melting wafers, try Ghirardelli. They are the next best thing to melting pure chocolate.

Notes

Must be refrigerated.  
Be sure to pat dry the watermelon before adding the whipped topping.  
The topping must be thawed out.
