Magical Lemon Pudding Cake

If you love lemon, this easy Lemon Pudding Cake is for you.  The warm lemon pudding with the lemon cake is fantastic and easy to make using a cake mix.

  • 1 box lemon cake mix ingredients on the back of the box
  • 2 3.4 ounces boxes instant lemon pudding
  • 1/2 cup sugar
  • 2 cups cold milk
  • 1-1/4 cup water


  • Preheat the oven 350 degrees.
  • Spray 9 x 13 baking pan with cooking spray.
  • Mix up the box of lemon cake mix according to the package.
  • In a separate bowl, combine both boxes of pudding mix with sugar, milk, and water.
  • Whisk for two minutes until it begins to thicken.
  • Spoon pudding mixture over cake mix batter.  It covers the cake better if you gently spoon it over the cake.
  • Bake for 55 minutes to one hour.
  • Insert a toothpick in the middle of the pudding cake.  If you get pudding on the toothpick only and no cake mix, the pudding cake is done.
  • The cake will slightly giggle because it does have pudding in it.
  • Allow the pudding cake to cool about 15 minutes.  This will allow the pudding to thicken up.
  • It is best served warm.


This easy lemon cake is beautifully served with fresh blueberries, blackberries, raspberries, or strawberries.  I had my blackberries ready to go and forgot to add them to my picture.
